An old-fashioned peanut butter pie is a classic (and easy) Southern dessert!

Time 6h50m

Number Of Ingredients 8

2 cups vanilla wafer cookie crumbs ((I use 60 whole Nilla wafer cookies))
6 tablespoons salted butter, melted and cooled
¼ cup sugar
1 ½ cups creamy peanut butter
1 (8 ounce) block cream cheese, softened at room temperature
1 cup confectioners' sugar, sifted
2 cups heavy whipping cream
Optional garnish: chopped peanuts; whipped cream

Steps:

  • Preheat oven to 400° F.
  • In a bowl, combine cookie crumbs, melted butter, and sugar. Pat the mixture onto the bottom and sides of a buttered 9-inch pie plate. I use the flat bottom of a small measuring cup to press the crumbs in an even layer.
  • Bake the shell in the 400° F oven for 10 minutes, transfer it to a rack, and let cool completely.
  • Once the crust is completely cool, prepare the filling. In a large bowl, use an electric mixer to beat the peanut butter and cream cheese on medium speed until combined. Add confectioners' sugar, beat to combine. Add cream; mix on low speed until combined. Increase mixer to high speed; beat just until the mixture thickens (be careful not to overbeat).
  • Spread the filling in the pie crust. Cover and refrigerate until firm; at least 4 hours or overnight.
  • Garnish with chopped peanuts and whipped cream just before serving.

Time 25m

Number Of Ingredients 5

1 c powdered sugar
4 oz softened cream cheese
1/2 pt whipping cream or small container of Cool Whip topping
3/4 c peanut butter (chunky or creamy works)
1 baked 8-inch pastry shell or one 8-inch chocolate cookie crust

Steps:

  • 1. Cream sugar and cream cheese together first.
  • 2. Add whipped cream or Cool Whip and peanut butter.
  • 3. Mix until smooth.
  • 4. Pour batter into pre-made or pre-bought chocolate pie crust (this is the tastiest if you love chocolate and peanut butter together). Or, follow directions for a single crust pie pastry (prick bottom and sides with a fork and bake in a 450 degree oven for 10 to 12 minutes or until golden).
  • 5. Chill for one hour.
  • 6. Top with more whipped cream.
  • 7. Add chopped peanuts, if desired.
  • 8. I always like to add Reese's peanut butter cups (miniature size) cut in half around the edges if using a chocolate crust.

PEANUT BUTTER PIE

This rich and creamy pie is like a mashup between a vanilla cheesecake and a peanut butter confection.

Yield makes one 9-inch pie

Number Of Ingredients 7

1 1/4 cups graham cracker crumbs
3 tablespoons unsalted butter, melted
1 cup heavy cream
8 ounces cream cheese, at room temperature
1 1/4 cups creamy peanut butter
3/4 cup packed light brown sugar
2 tablespoons pure vanilla extract

Steps:

  • Lesson Plan
  • Preheat the oven to 350°F.
  • In a bowl, stir together the graham cracker crumbs and melted butter; press into the bottom and sides of a 9-inch pie dish. Bake until brown, about 5 minutes. Set aside to cool completely.
  • With a heavy-duty stand mixer fitted with the whisk attachment, whisk the cream at high speed until it forms stiff peaks. Transfer to a large clean bowl and set aside.
  • Fit the stand mixer with the paddle attachment and a clean bowl; add the cream cheese, peanut butter, brown sugar, and vanilla and beat at high speed until the mixture is smooth and silky.
  • Gently fold the cream cheese-peanut butter mixture into the whipped cream with a spatula until completely blended. Spoon into the cooled pie shell and smooth out the top. Place the pie in the freezer for 1 hour or until ready to serve (if you are going to leave it in the freezer awhile, wrap it in plastic wrap after 1 hour so it doesn't get freezer burn).
  • Take the pie out of the freezer 15 minutes before serving. Slice it and pig out!

Tips:

  • Choose the right peanut butter. Not all peanut butters are created equal. For the best flavor, use a creamy, natural peanut butter that is made with roasted peanuts. Avoid peanut butters that contain added sugars, oils, or preservatives.
  • Don't overmix the filling. Overmixing the filling will make it tough. Stir just until the ingredients are combined.
  • Chill the pie before serving. Chilling the pie will help it set and make it easier to slice.
  • Serve the pie with your favorite toppings. Some popular toppings include whipped cream, chocolate chips, peanut butter cups, and chopped nuts.

Conclusion:

Mom's Incredibly Easy Peanut Butter Pie is a delicious and easy-to-make dessert. With its creamy filling and chocolatey crust, it's sure to be a hit with everyone who tries it. Whether you're looking for a special occasion dessert or a simple treat, this pie is a great option.
