Mom always made the icebox cake for us when we were kids.She made it with cooking pudding. You can add bananas or pineapple and you can top it off with whipped cream. I always like it this way the way mommy made it. Once the pudding melts into the graham crackers it just melts in your mouth.

16oz pkg graham crackers
1 pkg (3.5 oz.) instant vanilla pudding mix or cooking pudding
1 pkg (3.5 oz.) instant chocolate pudding mix or cooking pudding
5 c whole milk

Steps:

  • 1. The box says 2 cups of milk I added 1/2 extra which gave me a little bit more pudding. Blend the pudding mixes in different medium sized bowls. Stir until well blended. If using cooking pudding follow the instructions on the box.
  • 2. Place one single layer of graham crackers(save some) in the bottom of a 9x13" baking pan. Leave the crackers whole, do not crumble. You can fill in the gaps with broken graham crackers. Spread the chocolate or vanilla on top of crackers (save a little of each pudding for the last layers. Cover with another layer of crackers, Spread the remaining of the pudding on top follow by another layer of crackers. Now put the saved puddings of vanilla and chocolate making a swirl on top. Take the saved crackers and crumble them on top.
  • 3. Cover the pan with plastic wrap and chill in the refrigerator for 4 hours. Once finished watch your fingers it doesn't last.

My family loves this. At Christmas time, I use 1 box of red jello & 1 box of green jello

2 box large size jello.. can be sugar free.. red or green
1 box large size vanilla instant pudding
1 box graham crackers
1 pkg cool whip

Steps:

  • 1. Disolve 1 pkg of Jello according to package directions & put in a cake pan & let set completely
  • 2. After jello is set, put a layer of graham crackers over top. You may have to trim the crackers so that they cover the jello completely.
  • 3. Mix pudding according to package directions, USING 1/2 CUP LESS MILK. Pour the pudding over the graham crackers.
  • 4. Put another layer of graham crackers to cover the pudding & place in fridge.
  • 5. Dissolve the 2nd package of jello as stated on package. Put in fridge til thick but not completely set. Once it is thickened, pour over the graham crackers. Put back in fridge til completely set.
  • 6. To serve, cut in squares. Garnish with a tablespoon of Cool Whip

This is something my mom made all the time, especially in the summer. My family loves it, so I try to make it as much as possible

1 box graham crackers
3 large bananas
1 large pkg. jello chocolate instant pudding
1 large pkg. jello vanilla instant pudding
milk
heavy whipping cream

Steps:

  • 1. Lay graham crackers on bottom of 9x11 baking pan. Slice bananas. And lay on top of graham crackers (not all of them). Mix pudding according to package directions (seperately). Pour chocolate pudding on top of bananas. Another layer of graham crackers, bananas, and vanilla pudding, and top off with graham crackers. Whip heavy cream until thick. Ice the top of graham crackers. Wrap in Saran Wrap and put in refrigerator until firm about 2 hours.

Tips:

  • Use fresh, ripe fruit for the best flavor.
  • If you don't have graham crackers, you can use vanilla wafers or ladyfingers.
  • You can use any type of milk you like, but whole milk will give the cake a richer flavor.
