MOM'S HAMBURGER AND GREEN BEAN CASSEROLE

Mom's Hamburger and Green Bean Casserole image

This recipe was passed down from my grandmother, to my mother and now I make it frequently. It's a big hit with hubby. It is also another one of those recipes that show how they stretched a pound of hamburger to feed a family. A salad goes along nicely with this.

NANA'S HAMBURGER POTATO HOT DISH

Nana's Hamburger Potato Hot Dish image

One dish meal that is really good. I made this for a meal while visiting my daughter & her family in Germany. Everyone loved it, even my 2 & 4 year old Granddaughters!

Categories     One Dish Meal

Time 2h30m

Yield 1 casserole, 6-8 serving(s)

Number Of Ingredients 8

1 1/2 lbs hamburger
1/4 cup chopped onion
1/4 teaspoon pepper
6 medium potatoes
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of celery soup
1 (15 ounce) can creamed corn

Steps:

  • Brown hamburger, chopped onion and pepper together in a skillet.
  • Wash and slice the potatoes with the skins left on.
  • Stir together all the soups & corn in a large casserole pan.
  • Add browned hamburger and potatoes to the soup mixture and stir well.
  • Bake at 375 degree oven for approximately 2 to 2 1/2 hours.
  • Stir a couple times during baking.
  • I usually have it covered the 1st hour, then leave it uncovered the remaining time.
  • This is one of those recipes that I never had a recipe to follow, I just knew the ingredients from my mom making it when I was a child. The hamburger amount could vary from 1 to 2 lbs & the potatoes could be anywhere from 4-8 depending how much you want to make. Also could add an extra can of cream corn if making a larger amount of hamburger & potatoes.
  • I have also made it in my crock pot; starting out the 1st hour in the oven, then finishing it off in the crockpot on low for 3-4 hours because I brought it to work for a potluck.

3 BEAN HOT DISH

3 Bean Hot Dish image

This is a recipe that has been in my family for many years. It is a very simple recipe. Everyone loves it and it is can be made in the oven or a crock pot; so we bring it to potlucks a lot! Always a hit!

Categories     One Dish Meal

Time 1h30m

Yield 6-8 serving(s)

Number Of Ingredients 12

1 lb hamburger
1/2 lb bacon
1/2 cup onion, chopped
1/4 teaspoon pepper
1/2 cup ketchup
1 tablespoon mustard
3/4 cup brown sugar
2 tablespoons vinegar
1 teaspoon salt
1 (15 1/2 ounce) can butter beans
1 (15 1/2 ounce) can kidney beans
1 (20 ounce) can baked beans (Bush's)

Steps:

  • Brown the bacon & let it cool. Some of the bacon grease may be saved and added in with the hamburger if you choose too.
  • Cut or break the bacon into bite size pieces.
  • While bacon is cooling brown the hamburger with the chopped onion and pepper, then drain of the grease if needed.
  • Add the bacon (and bacon grease if you choose to) to the hamburger.
  • Mix together the ketchup, mustard, brown sugar, vinegar and salt.
  • Stir this in to the hamburger/bacon mixture.
  • Stir in all the cans of beans.
  • Bake in large baking dish in 350 degree oven for 1 hour or in your crock pot on high about 3-4 hours.
  • A few hints for everyone. Any leftovers may be frozen, so you may enjoy at a later time without the prep work. You may also use your own favorite beans instead of those suggested in the recipe -- lima beans, pork and beans, red beans, northern beans, etc. Sometimes, depending on how many people I am serving, I will use 1 1/2 lbs. of hamburger and an extra can or 2 of beans and it is always just as good.
  • Enjoy!

THE MIXTURE - GREEN BEAN, MASHED POTATO, GROUND BEEF CASSEROLE

The Mixture - Green Bean, Mashed Potato, Ground Beef Casserole image

My mom used to call this "the Mixture" and it was always a favorite around our house growing up.

Categories     One Dish Meal

Time 55m

Yield 4 serving(s)

Number Of Ingredients 9

1 1/3 lbs potatoes (about 4 medium)
milk
butter
thinly sliced onion
1 cup frozen green beans
2 -4 slices processed american cheese slices or 2 -4 slices shredded casserole cheese
1/2 lb ground beef
paprika
breadcrumbs (optional)

Steps:

  • Peel the potatoes and cut into chunks. Start them boiling.
  • Meanwhile, start green beans boiling.
  • Meanwhile, brown ground beef.
  • Slice onions and spray casserole dish with non-stick coating.
  • Place the browned ground beef in the bottom of the casserole dish. Cover with half of the cheese (tearing cheese slices into chunks if using) and half of the sliced onions.
  • Add green beans next, and repeat cheese & onion layers.
  • Drain potatoes, add milk and butter in your preferred amounts and mash. I use about 2 tablespoons butter & add milk until the consitancy is right.
  • Spread mashed potatoes over top of casserole.
  • Sprinkle with additional cheese and breadcrumbs followed by paprika if desired, otherwise just with paprika.
  • Bake for about 20-30 minutes in a 400 oven until top of mashed potatoes is golden and cheese is well melted. May be prepared in advance, refridgerated and baked later.
  • Hints: if this is too bland, some suggestions to spice it up: try adding garlic, worcestershire sauce and other spices when browning beef. Add paprika and garlic powder to the potatoes while mixing. Use jalapeno cheese.

Tips for Making Mom's Hamburger Green Bean Tomato Soup Mashed Potato Hot Dish

  • Use a variety of ground meats. In place of all beef, try a combination of ground pork, beef, and veal, or ground turkey and beef. The combination of meats brings out a great flavor.
  • Customize the vegetables. Feel free to use what you have on hand or prefer. Instead of green beans, try peas, corn, or a combination of vegetables.
  • Make it a slow-cooker meal. Brown the beef, onions, and garlic in a skillet, then transfer to a slow cooker. Add the remaining ingredients and cook on low for 6-8 hours or on high for 3-4 hours.
  • Add some extra flavor. Stir in a tablespoon of Worcestershire sauce, chili powder, or cumin for a boost of flavor. You could also add a bay leaf or two for a more complex flavor.
  • Top it off with your favorite garnishes. Before serving, top each bowl of soup with a dollop of sour cream, a sprinkling of chopped fresh parsley, or a few grated cheddar cheese. Crusty bread or crackers are also great accompaniments.

Conclusion

Mom's Hamburger Green Bean Tomato Soup Mashed Potato Hot Dish is a hearty, comforting meal that's perfect for a cold night. It's easy to make, and it's a great way to use up leftover mashed potatoes. This dish is sure to be a hit with your family and friends.
