Place a fat 3 1/2 cups of this mix into a baggie or jar to save for another day. To the remaining fat 3 1/2 cups flour mixture, toss in the caraway seeds, pecan pieces and mix. Add the Guinness. Stir with a fork or sturdy spatula until combined. Turn the lumpy dough into a buttered loaf pan. Pour melted butter over top of loaf. Bake until golden brown, about 45-60 minutes. Transfer to a wire rack to cool.
