MOM'S GREEN BEANS AND BACON (OR HAM)
Mom made these green beans a lot. In summer she used fresh beans and the rest of the year she used home canned beans. It is a very simple recipe and it is good.

Steps:
- 1. Fry bacon (or ham) until it is beginning to cook. Add onion and continue cooking until onion is translucent. Don't let bacon get too crisp. It will continue to cook with the beans and flavor them. Drain grease. Crumble or cut bacon or ham. Set aside and prepare beans.
- 2. If using fresh greens, clean them and cut in bite sized pieces. Cook in boiling water until tender. Add all other ingredients to green beans you just cooked (or to the unheated canned green beans if using those) and cook for approximately 10 minutes to heat thoroughly and blend flavors.
GREAT GREEN BEANS
Every year, Mom cans green beans from our garden. I love them, but I get tired of the plain old "heat 'em up with bacon grease" beans. So...this recipe came out of the desire to eat green beans a different way. It's easy enough for a weeknight, nice enough for company. Since not everyone has access to canned green beans, I made them with canned green beans to get the measurements exact for posting.

Steps:
- Melt 4 tablespoons butter in a large skillet over medium heat. Add the shallots and saute until translucent, about 3 minutes. Add the mushrooms, thyme and sage and saute until most of the liquid has evaporated, about 10 minutes. Stir in the flour and cook 5 more minutes. Next add the sherry and stir until thickened. Add the cream and simmer an additional 5 minutes. Set sauce aside. (Recipe can be made to this point up to 2 days before, refrigerated.)
- Melt the remaining butter in a large skillet over high heat. Add the beans, toss to coat with the butter and saute until bright green, about 7 minutes. They'll still be crispy. Season with salt and pepper and place on a platter.
- Bring the sauce to a simmer and spoon over the beans. Top with the frizzled leeks.
- Heat a couple inches of oil to 350 degrees F in a large, heavy pot. To check the oil temperature, drop a bread cube into it. If the cube browns within 30 seconds the oil is hot enough.
- Trim leek, slice in half lengthwise, and wash well under running water. Cut the root end off the leek and then cut each half lengthwise into long, thin strips.
- Season flour with salt and pepper. Dredge leek strips in flour. Fry leeks for 1 to 2 minutes, or until crisp and golden. Drain on paper towels.
THE BEST GREEN BEANS EVER

Steps:
- Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
- Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.
Tips:
- Select fresh, tender green beans: Look for beans that are bright green in color, free from blemishes, and have a crisp snap when broken.
- Trim the beans properly: Remove the tough ends of the beans, but leave the flavorful tips intact. You can also trim the beans into smaller pieces if desired.
- Blanch the beans before cooking: Blanching helps to preserve the beans' color and nutrients, and it also makes them more tender. To blanch the beans, bring a large pot of salted water to a boil. Add the beans and cook for 2-3 minutes, or until they are bright green and tender-crisp. Drain the beans and immediately transfer them to a bowl of ice water to stop the cooking process.
- Cook the beans with flavorful ingredients: Green beans pair well with a variety of flavors, such as bacon, garlic, onions, tomatoes, and herbs. Experiment with different combinations to find your favorite way to enjoy them.
- Don't overcook the beans: Green beans are best when they are cooked tender-crisp. Overcooking will make them mushy and bland.
Conclusion:
Green beans are a delicious and versatile vegetable that can be enjoyed in many different ways. With their mild flavor and tender-crisp texture, they are a perfect addition to a variety of dishes, from simple side dishes to hearty main courses. Whether you blanch them, boil them, stir-fry them, or roast them, green beans are a healthy and delicious way to add some extra nutrition to your diet. So next time you're looking for a quick and easy side dish, reach for a handful of green beans. You won't be disappointed.
