1 can (20 ounces) pineapple chunks
2/3 cup sugar
1 tablespoon cornstarch
1/2 cup orange juice
3 tablespoons lemon juice
1 large egg, beaten
1/2 teaspoon butter

Steps:

  • Drain pineapple, reserving the juice. Set pineapple aside for salad. In a saucepan, combine sugar and cornstarch. Stir in the pineapple juice, orange juice and lemon juice. Add egg, mix well. 4 egg yolks
4 tablespoons distilled white vinegar
2 tablespoons white sugar
¾ teaspoon prepared mustard
½ teaspoon salt
16 large marshmallows, halved
1 cup heavy whipping cream

Steps:

  • On top of a double boiler, beat together the egg yolks, vinegar, sugar, mustard and salt. Cook over medium heat until mixture becomes thick. Remove from heat. Add the marshmallows to the mixture and stir until dissolved.
  • Whip 1/2 pint of the whipping cream until soft peaks form, and then fold it into the cooked ingredients. If mixture is too thick, thin it by adding a little cream or fruit juice. Add to your favorite fruit salad and use enough dressing to make it the consistency you desire.
  • Store dressing, tightly covered, in the refrigerator for a week or so.

1 banana, sliced
1 apples, golden delicious, sliced
1 orange, peeled and sliced
1 c purple grapes, halved
1 c strawberries and/or kiwis, sliced
1 small lemon, juiced
1 small can pineapple tidbits, drained; reserve juice
SAUCE
1 pinch sugar
reserved pineapple juice
1 Tbsp mayonnaise

2 cups mini marshmallows
1 pint fresh whipping cream
almond extract

The dressing is very similar to what's used in Taffy Apple Salads, so I used that for awhile. I finally found my mom's recipe in a basket full of old recipes and want to post it here. I could eat all of this in one sitting. I don't care for the coconut, so I don't add it. I also guessed on the number of servings. Prep time includes time spent whisking dressing.
