2 cups frozen baby broccoli florets, thawed and drained
1 (10.5 ounce) can condensed cream of mushroom soup (NOT diluted)
1 (10.5 ounce) can cream of chicken soup (NOT diluted)
1 cup milk
1 (12 ounce) package Pepperidge Farm stuffing mix (or two 6-ounce boxes of Stove Top stuffing mix), plus additional ingredients called for on the package*
Optional garnish: chopped fresh parsley or thyme

Steps:

  • Preheat oven to 350°F (180°C).
  • Grease a 9x13-inch baking dish; set aside.

12 12 3 ounces skinless, boneless rotisserie chicken breast, chopped (about 3 cups)
1/2 1/2 1/2 cup plain fat-free Greek yogurt
1/4 1/4 1/4 cup canola mayonnaise
1/2 1/2 1/2 teaspoon freshly ground black pepper
1/4 1/4 1/4 teaspoon salt
2 2 1/2 ounces sharp cheddar cheese, shredded (about 1/2 cup)

1 (16 ounce) package rotini pasta, uncooked
2 tablespoons butter
3 tablespoons extra-virgin olive oil
2 cups broccoli florets, finely chopped
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup milk
salt and pepper to taste
⅛ teaspoon chipotle chile powder
2 cups Cheddar cheese, shredded
¼ cup onion, finely diced
1 pound ground chicken
1 cup sour cream

Steps:

  • Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook until al dente, 7 to 10 minutes. Drain, cover, and set aside until needed.

  • Toss the pasta with the broccoli sauce until evenly blended. Stir in the sour cream, if desired. Stir the broccoli sauce mixture into the chicken mixture. Spoon into the prepared baking dish. Top with remaining 1 cup Cheddar cheese.
  • Cook under preheated broiler until cheese melts and browns around the edges, 3 to 5 minutes.
