MOM'S DRIED BEEF AND CORN CASSEROLE

Mom's Dried Beef and Corn Casserole image

This was my mom's favorite casserole when she was younger. However, she didn't get it very often because her brothers didn't like it as much. I like it, though, so I posted it! To make the dish less salty, rinse the beef in water before cooking. Also, cut down on the addition of salt in the recipe. (I find I need to do these things, to suit my tastes)

Time 55m

Yield 10 portions, 10 serving(s)

Number Of Ingredients 6

3 tablespoons butter (melted)
1 cup sour cream
1 (15 1/4 ounce) can creamed corn
1 (15 1/4 ounce) can whole corn (drained)
1 egg
1 (8 1/2 ounce) box Jiffy cornbread mix (can use Jiffy Corn Muffin Mix Copycat, Recipe 345502)

Steps:

  • Mix all ingredients well.
  • Bake at 350 for 45 minutes in greased 7x11 baking dish.

Tips:

  • Fresh Corn is Always Best - if you can get your hands on fresh corn use it, the flavor is much more intense and it will give your corn casserole a more natural sweetness.
  • Don't Overcook Your Corn - corn kernels should have a slight bite to them, if they're overcooked they'll be mushy and tasteless.
  • Use a Good Quality Cheese - the cheese is one of the main ingredients in this dish, so it's important to use a good quality cheese that melts well.
  • Add Some Cornbread Crumbs - cornbread crumbs add a nice texture and flavor to this casserole. You can use store-bought cornbread crumbs or make your own by crumbling up some leftover cornbread.
  • Garnish with Fresh Herbs - before serving, garnish your corn casserole with some fresh herbs like chives, parsley, or cilantro. This will add a pop of color and flavor.

Conclusion:

This classic corn casserole recipe is a delicious and easy side dish that's perfect for any occasion. It's made with simple ingredients that you probably already have on hand, and it can be on the table in under an hour.
