6 cups medium-size red cabbage (organic, if possible), coarsely sliced
3 tablespoons white vinegar
Kosher salt
Use one of the following:
1 teaspoon Dijon mustard
1 teaspoon celery seeds
1 teaspoon Old Bay seasoning
1 tablespoon Jane's Krazy Mixed-Up Salt
3 tablespoons wine vinegar
2 tablespoons shaved carrot
4 tablespoons organic nonfat yogurt

If you use wine vinegar, eliminate the white vinegar.
If you use carrot, eliminate the dill.

EASY COLESLAW WITH A KICK!

Easy Coleslaw With a Kick! image

This is a recipe that gives regular old coleslaw a spicy kick. Very easy to make with great results! If you have never had wasabi, please, start out with a teaspoon and work your way up from there. Wasabi is Japanese horseradish and it is powerful stuff! But it sure does goes well with the rest of the ingredients.

Time 2h10m

Yield 8-10 serving(s)

Number Of Ingredients 9

1 (16 ounce) bag coleslaw mix
2/3 cup mayonnaise
1/4 cup sugar
2 tablespoons apple cider vinegar
8 ounces crushed pineapple, drained (reserve the juice, it's an ingredient!)
3 tablespoons pineapple juice
1 -2 tablespoon wasabi (again, if this is new to you, please work your way up)
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Mix everything but the coleslaw together.
  • Pay special attention to be sure the wasabi is well blended. A trick I learned that works very well, is to put all the ingredients but the coleslaw mix into a big ziploc bag, then squish, shake, and massage the ingredients into a nice smooth blend.
  • Then add the coleslaw mix and the ingredients together in a large bowl and mix well.
  • Cover and put it in the fridge for a couple hours to overnight to allow all the flavors to blend inches It will be soupy on the bottom, but the salad will be crisp.

Tips:

  • Choose the right cabbage. Green cabbage is the most common type used in coleslaw, but you can also use red cabbage or a combination of both. Red cabbage will give your coleslaw a beautiful purple hue.
  • Shred the cabbage finely. This will help the dressing to coat the cabbage evenly. You can use a food processor or a sharp knife to shred the cabbage.
  • Use a variety of vegetables. In addition to cabbage, you can add other vegetables to your coleslaw, such as carrots, celery, onion, and bell pepper.
  • Make your own dressing. The dressing is what really makes coleslaw special. You can use a variety of ingredients to make your dressing, such as mayonnaise, vinegar, sugar, and spices.
  • Let the coleslaw chill. After you make the coleslaw, let it chill in the refrigerator for at least 30 minutes. This will allow the flavors to meld together.

Conclusion:

Coleslaw is a delicious and versatile side dish that can be served with a variety of meals. It is also a great way to use up leftover vegetables. With so many different variations, there is sure to be a coleslaw recipe that everyone will enjoy. So next time you are looking for a side dish, give coleslaw a try. You won't be disappointed!
