Steps:
- Place potatoes in a very large pot of cold water then bring to a boil. Boil for 20-30 minutes or until a knife can be easily inserted into the centers.
- Meanwhile, place eggs in a saucepan then cover with cold water 1" above the tops. Bring to a boil, place a lid on top, and then remove from heat and let sit for 12 minutes. Drain then plunge into ice water or run under cold water for a few minutes. Peel eggs then chop and place into the refrigerator.
- Mix dressing ingredients together in a small bowl then set aside.
- When potatoes are tender, remove to a colander with tongs. When cool enough to handle, but still warm, use a paring knife to help peel potatoes then chop into large pieces and place in a large bowl. Drizzle 3/4 of the dressing over the warm potatoes then toss to combine. Cover then refrigerate for at least 1 hour, or up to overnight.
- When ready to serve, add remaining dressing, 1/2 cup mayonnaise, chopped hard boiled eggs, and salt to potatoes then mix to combine, adding more mayonnaise to reach desired consistency.

Steps:
- Place the potatoes in a medium saucepan or pressure cooker (see Note). Add 2 teaspoons salt and enough water to cover the potatoes. Boil the potatoes until they are tender when pierced with the point of a knife but hold their shape, 30 minutes. Drain the potatoes, transfer them to a large mixing bowl, and allow them to cool completely. Add the chopped eggs, mayonnaise, and sweet relish, and fold gently to combine. Add salt and pepper to taste. Refrigerate until ready to serve.
Tips:
- For the best flavor, use a combination of waxy and starchy potatoes.
- Boil the potatoes until they are tender, but not mushy.
- Drain the potatoes immediately and rinse them with cold water to stop the cooking process.
- Cube the potatoes while they are still warm so they will absorb the dressing better.
- Use a mayonnaise-based dressing for a classic creamy potato salad.
- Add hard-boiled eggs, celery, onion, and pickles for a more flavorful potato salad.
- Season the potato salad with salt, pepper, and herbs to taste.
- Chill the potato salad for at least 30 minutes before serving to allow the flavors to meld.
Conclusion:
Mom's classic creamy potato salad is a delicious and easy-to-make side dish that is perfect for any occasion. With its creamy dressing, tender potatoes, and flavorful add-ins, this potato salad is sure to be a hit with everyone at your table.
