This is our family Christmas fudge recipe...My mom gave it to me and I have never had a failed batch yet... This is rich and decadent is not gritty like some i have tried....We both make this every year...I have tried others but this one is the best yet....I will never use another.

4 1/4 c sugar
1 can(s) evaporated milk (tall can)
1 stick butter, cold
2 bittersweet chocolate (squares)
1/4 tsp salt
3 pkg chocolate chips
1 pt marshmallow cream
2 c walnut pieces

Steps:

  • 1. Butter baking pan...Makes 5 pounds ( I use a brownie pan though I like mine fairly thick... on medium low heat
  • 2. Heat slowly the first 7 ingredients, to a rolling boil for 10 minutes... Then stir in nuts after removing from heat... Pour into pan and smooth out with spatula quickly before setting....
  • 3. Let set in cool place cover with wax paper while it cools....Cut into squares and decorate your platter, you may cover with press and seal after they have cooled..

2/3 c carnation evaporated milk
1 2/3 c sugar
1/2 tsp salt
1 1/2 c mini marshmallows
1 1/2 c chocolate chips
1 tsp vanilla extract
1/2 c chopped walnuts, optional

Steps:

  • 1. Place milk, sugar, and salt in medium saucepan and bring to a boil, stirring constantly. Boil for 5 minutes. Remove from heat. Add remaining ingredients and continue stirring until marshmallows and chocolate are melted and mixture is well combined.
  • 2. Pour into a buttered 9 by 9 inch pan. Cut in squares when cooled a bit, but still warm. Do not remove from pan until completely cooled. Then cut again on same lines and enjoy!

1/2 cup butter
1 cup whole milk
Dash of salt
4 ounces unsweetened chocolate
1 teaspoon vanilla extract

  • Butter an 8 x 8-inch pan. Combine sugar, butter, milk, salt, and chocolate in medium saucepan. Stirring constantly, cook over medium heat until all ingredients melt and come to a boil. Do not scrape down the sides of the pan. Lower heat, insert candy thermometer, and let boil slowly without stirring for about 10 minutes or until soft ball forms when dropped in a cup of cold water (238 degrees F on a candy thermometer). Remove pan from heat and cool. Add vanilla. Beat steadily until fudge loses its gloss. Add nuts. Pour into pan. Cool for 20 minutes and cut into squares. Store in airtight container or wrap in tinfoil.

3/4 cup mini marshmallows
1 cup mini marshmallows
6 semi-sweet chocolate baking squares
1/2 cup butter
2 cups sugar
2/3 cup evaporated milk (NOT sweetened condensed)
1 teaspoon vanilla
1 cup chopped walnuts (optional)

Steps:

  • Grease saucepan and 8-inch square pan with spray.
  • Freeze the 3/4 cup marshmallows till firm.
  • Put the baking chocolate squares and the butter in a large bowl.
