Number Of Ingredients 14

6 tablespoons butter
1 cup finely chopped onion
¾ cup diced carrot
½ cup diced celery
1 ½ teaspoons kosher salt
1 teaspoon finely chopped fresh rosemary
⅓ cup all-purpose flour
1 ½ cups chicken broth
½ cup heavy cream
4 cups diced cooked chicken breast
1 cup frozen peas
2 tablespoons finely chopped fresh parsley

1 (14.1 ounce) package ready-to-use refrigerated pie crusts

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).

  • To make sure the chicken is cooked through, use a meat thermometer to check that it has reached an internal temperature of 165°F (74°C).
  • If you don't have any fresh vegetables on hand, you can use frozen vegetables instead.
  • Feel free to experiment with different vegetables in your chicken pot pie. Some other good options include carrots, celery, and peas.
  • If you want a thicker pot pie filling, add more flour or cornstarch to the chicken broth.
  • Serve chicken pot pie with a side salad or a bowl of soup for a complete meal.
