2 cups white sugar
½ cup cocoa
1 cup milk
4 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Grease an 8x8 inch square baking pan. Set aside.
  • Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
  • Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
  • Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
  • Pour into prepared pan and let cool. Cut into about 60 squares.

My mom is the ultimate fudge maker to me. Instead of asking for presents for Christmas I always asked her to make me fudge. She always has, but got me presents too because she is a good mom like that. This is my absolute favorite fudge that my mom makes. I hope you enjoy it too.

Number Of Ingredients 6

1 tsp vanilla
7 oz marshmallow cream
12 oz semi-sweet chocolate chips
2 1/2 c sugar
5 oz evaporated milk
1/2 c butter

Steps:

  • 1. Put vanilla, chocolate chips and marshmallow cream in a large bowl. Set aside.
  • 2. Mix sugar, evaporated milk and 1 tablespoon of the butter in a 2 1/2 - 3 quart sauce pan.
  • 3. Bring to a full rolling boil while stirring constantly.
  • 4. Allow to boil for 5 minutes continuing to stir constantly....you can boil 7 minutes if you like a firmer fudge.
  • 5. Drip a drop of the boiling mixture in a cup of ice water. Poke it, if it is hard to the touch it is done. If it squishes boil another minute or two and try the water thing again until it stays a hard ball.
  • 6. When it is the hard ball stage add remaining butter then bring it back to a boil for one minute.
  • 7. Pour contents of sauce pan into the large bowl. Stir all the ingredients together until the chocolate chips are completely melted and the mixture is smooth and blended completely.
  • 8. Pour into a 9 x 9 baking pan and set on counter to cool. Cut into squares and serve when fudge is firm.

  • Use high-quality chocolate. The better the chocolate you use, the better the fudge will be. Look for chocolate with a cocoa content of at least 70%.
  • Don't overcook the fudge. Fudge is done when it reaches a temperature of 234 degrees Fahrenheit. If you overcook it, it will be grainy and dry.
