We grew up on venison, and this is one of my Mom's great barbeque sauces to make with it.

¼ cup butter
1 small onion, minced
1 cup ketchup
3 tablespoons lemon juice
2 tablespoons Worcestershire sauce
3 tablespoons brown sugar
2 tablespoons prepared yellow mustard
salt and ground black pepper to taste
4 (4 ounce) venison steaks
2 teaspoons cornstarch
1 tablespoon water

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C).
  • Melt the butter in a large skillet over medium heat. Cook and stir the onion in the melted butter until softened, about 5 minutes. Stir the ketchup, lemon juice, Worcestershire sauce, brown sugar, and yellow mustard into the onion and butter; allow mixture to warm completely.
  • Heat a separate skillet over medium-high heat. Season the steaks with salt and black pepper; cook in the skillet until browned on each side, 3 to 4 minutes per side. Transfer the steaks to a 9x13-inch baking dish. Pour the sauce from the skillet over the steaks.
  • Bake in the preheated oven until meat is cooked through and no longer pink in the middle, about 1 hour.
  • Transfer the steaks from the baking dish to a platter, shaking any excess sauce from the meat. Stir the cornstarch and water together until smooth in a small bowl, then mix into the hot sauce remaining in the baking dish until the mixture begins to thicken; pour over the steaks to serve.

I thought I had lost this! I loved the smell of this cooking on the stove. It brings back memories of my parents and their friends making this when we spent summers in Long Beach Island, NJ. You can adjust for the amount of sauce you need. I just adjusted to make 2-3 cups for 2 packages of ribs (about 4-5 lbs.) and I used Splenda brown sugar for my husband.

6 medium onions, sliced
butter, for browning
6 cups ketchup (Heinz only)
1 1/2 cups vinegar
9 tablespoons mustard (Goulden's)
9 tablespoons Worcestershire sauce
4 tablespoons brown sugar
1/4 teaspoon salt

Steps:

  • Brown onions in butter in bottom of a large saucepan.
  • Add remaining ingredients and simmer 10 minutes.
  • Use this to marinate ribs that have been par boiled for 20 minutes. Marinate several hours and then grill!

This is the bbq sauce we grew up on. It's really the only bbq sauce I like, it's sweet and savory. Not smoky. I usually double the recipe. I make it in an electric skillet....it will burn and stick if you are multitasking. You can make it a day or 2 in advance.

3 Tbsp butter
3 Tbsp brown sugar
3 Tbsp worchestershire sauce
3 Tbsp vinegar
1/4 c finely chopped onion
1/4 c lemon juice
1 c catsup (low/no sodium)
1 c water

Steps:

  • 1. Combine onions and butter in skillet; saute onions until translucent and softened....do not brown.
  • 2. Stir the remaining ingredients together.
  • 3. Add to onion & butter mixture.
  • 4. Bring to a boil, reduce heat and simmer until thickened to desired consistency.
  • 5. You could use a combo of butter and evoo to reduce the sat. fat content.
