Dough for single-crust pie
3/4 cup sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
2 cups whole milk
3 large egg yolks, room temperature, lightly beaten
2 tablespoons butter
1 teaspoon vanilla extract
3 medium, firm bananas
Whipped cream, optional

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°., Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. 1 envelope unflavored gelatin
1/4 cup cold water
3/4 cup sugar
1/4 cup cornstarch
1/2 teaspoon salt
2-3/4 cups milk
4 egg yolks, beaten
2 tablespoons butter
1 tablespoon vanilla extract
4 medium firm bananas, divided
1 cup heavy whipping cream, whipped
1 pastry shell (10 inches), baked
Juice and grated peel of 1 lemon
1/2 cup apple jelly

Steps:

  • Soften gelatin in cold water; set aside. In a saucepan, combine the sugar, cornstarch and salt. Whisk in the milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. , Stir a small amount of hot filling into yolks. Return all to the pan, stirring constantly. Bring to a gentle boil. My mom has been making this for as long as I can remember. We thought that we lost the recipe but as she was going through her recipe drawer - there is was! We were so happy because mom turned 86 this year and if we had lost it, I know we would never have made it again. Hope you enjoy it like our family does!

1 precooked pie shell
1/2 c sugar or a little more
1 1/2 c water
4 Tbsp corn starch - level
1/2 tsp salt
1 tsp vanilla
1 dash(es) yellow food color - just a drop

Steps:

  • 1. Boil over low fire (after you have mixed all ingredients above except vanilla). Stirring constantly until it thickens.
  • 2. Remove from range and add drop of yellow food color and vanilla.
  • 3. Pour over sliced bananas in precooked pie shell while mixture is still hot. You will need enough bananas to slice a couple of layers into the pie shells before you add the glaze. You can also sub bananas with other fruit - we just always used bananas!
  • 4. After cooling, top with whipped cream that is sweetened.

3 cups milk
4 tablespoons flour
2 tablespoons cornstarch
3 egg yolks
1/2 cup sugar
1/8 teaspoon salt
3 tablespoons butter

1 deep dish pie shell, baked & cooled
4 bananas, sliced

Steps:

  • TO MAKE FILLING: Mix flour and constarch with 1/3 cup cold milk to make a thin smooth paste, and set aside.
  • In a separate bowl, beat egg yolks, then add sugar and salt and beat well.
  • In a medium saucepan, scald remaining milk, stirring constantly.
  • While you continue stirring the milk in the pot, add a small amount of the scalded milk to the flour paste and a small amount to the egg/sugar mixture.
  • Pour both mixtures into the pot with the scalded milk and stir well.
  • Cook over medium heat, stirring constantly, until thickened. Remove from heat.
