Categories     Cheese     Vegetable     Fry     Quick & Easy

Yield Makes 4 servings

Number Of Ingredients 6

2 medium sized zucchini
(approximately 2 inch diameter and at least 8 inches long)
Vegetable Oil - enough to cover the bottom of the frying pan.
1 cup (at least) grated parmesan and pecorino romano cheese blend.
Sliced Fresh Italian Bread
1 yellow banana hot pepper (optional)

Steps:

  • Clean and slice the zucchini. (about 1/8 - 1/4 inch thick) Prepare a platter or large dish by lining it with paper towel. Heat oil in frying pan. When oil is hot enough to fry, place a layer of zucchini slices in pan. After about 2 minutes turn over the slices of zucchini. The cooked side should be slightly browned. The zucchini slices will be tender and golden. Place the fried zucchini on the prepared platter. Immediately sprinkle with grated cheese. Pile hot zucchini slices on a slice of fresh, italian bread. Fold the bread over and enjoy. Note: If you want spicey hot zucchini, fry the hot pepper in the oil prior to frying the zucchini.

Tips:

  • Choose tender, young zucchini for best results.
  • Slice the zucchini evenly so that they cook evenly.
  • Soak the zucchini slices in buttermilk or milk for at least 30 minutes to help them stay tender and juicy.
  • Season the zucchini slices with salt, pepper, and any other desired spices before breading.
  • Use a light hand when breading the zucchini slices; too much breading will make them soggy.
  • Heat the oil to the proper temperature before frying the zucchini; if the oil is not hot enough, the zucchini will absorb too much oil.
  • Fry the zucchini slices in batches to avoid overcrowding the pan.
  • Drain the zucchini slices on paper towels to remove excess oil.
  • Serve the zucchini slices immediately with your favorite dipping sauce.

Mom's Angie's Fried Zucchini is a classic Southern comfort food that is easy to make and always a crowd-pleaser.
