- After 30 minutes, stir in the onion and green bell pepper. Cook and stir until the chicken is no longer pink at the bone, and the onion is tender, about 10 minutes. Pour 2 tablespoons of the reserved peach juice into a small bowl, and set aside. Pour the remaining peach juice into the pot along with the soy sauce and vinegar; bring to a boil over medium-high heat. Dissolve the cornstarch in the reserved peach juice, and stir into the boiling sauce. Cook and stir until the sauce thickens and is no longer cloudy, about 1 minute. Stir in the peach halves and chopped tomatoes. Cook and stir until the peaches are hot and the tomatoes are beginning to fall apart, about 5 minutes. Tips:
- Use a large skillet or wok: This will help to ensure that the chicken cooks evenly and doesn't overcrowd the pan.
- Cut the chicken into uniform pieces: This will help them to cook evenly.
- Don't overcrowd the pan: If you do, the chicken will steam instead of fry and won't get crispy.
- Cook the chicken in batches if necessary: If you have a lot of chicken to cook, cook it in batches so that you don't overcrowd the pan.
- Use a meat thermometer to check the internal temperature of the chicken: The chicken is done when it reaches an internal temperature of 165 degrees Fahrenheit.
- Make sure the sauce is thickened before serving: If the sauce is too thin, it will run off the chicken and won't be as flavorful.
Conclusion:
This Polynesian chicken recipe is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is tender and juicy, and the sauce is flavorful and tangy. Serve it over rice or noodles, or with a side of vegetables.
