2 cups all purpose flour

3/4 cup granulated sugar (can use a combination of brown sugar and granulated sugar (see post))
2 large eggs
6 tablespoons unsalted butter (melted and cooled)
1/3 cup sour cream (plain Greek yogurt can be used instead)
1 teaspoon vanilla extract

Steps:

  • Mash bananas in a large bowl using a potato masher, fork, or a mixer. There can be some small chunks remaining, it doesn't have to be completely smooth.

  • Add flour mixture and stir in gently just until combined. Transfer to the prepared loaf pan and use the spatula to smooth the top.
  • Bake for 50 to 60 minutes or until an inserted toothpick comes out clean or with a few moist crumbs. If bread starts to get too brown on top, tent with foil for the last 10 minutes.
  • Let bread cool on cooling rack in loaf pan for 15 to 20 minutes. Invert the loaf pan and carefully remove banana bread. Let bread continue to cool on the rack for another hour or more. Slice and serve.

Mom's Best Banana Bread image

I promise you that my mom's banana bread recipe is the absolute BEST you'll ever make or taste -- I've tried other banana bread recipes, but - they don't even come close to my Mom's -- Love you Mommy!

Categories     Quick Breads

Time 55m

Yield 4-6 serving(s)

Number Of Ingredients 12

1 1/4 cups mashed bananas (4 to 5 Medium bananas)
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/3 cup unsalted butter, at room temperature
2/3 cup sugar (or Splenda, whatever you like)
2 eggs, separated (Large or Medium)
1 1/2 ounces milk
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons flax seeds
1/4 cup chopped walnuts (optional) or 1/4 cup pecans (optional)

Steps:

  • Cream together butter, sugar, & egg yolks until creamy.
  • Sift dry ingredients together (flour, baking soda, salt, cinnamon & nutmeg). Alternately add the dry mixture to the creamed butter mixture as well as the milk & mashed bananas. Beat the egg whites until a stiff peak forms and fold in with a wooden spoon, (make sure you only use a wooden spoon to do this - this is KEY), next - fold in the chopped nuts also stir in with the wooden spoon.
  • Bake in a loaf pan that you have sprayed with olive oil or non-stick spray and dusted lightly with flour at 350° for approximately 45 minutes - insert a toothpick in the center of the loaf to ensure it is not runny, if it is - allow to bake an additional 5-10 minutes.
  • Cool on a wire rack and serve with cream cheese or your favorite margarine.
  • Note: I love to wait a day and then toast a piece in my toaster oven - it is SO good when it gets re-heated and toasty with butter on it and a cup of coffee - YUM!

Tips:

  • Ensure ripe bananas: Use overripe bananas for a sweeter and more flavorful banana bread. The riper the bananas, the better the bread will be.
  • Use quality ingredients: Fresh, high-quality ingredients make a big difference in the taste of your banana bread. Use real butter and eggs, and choose a good quality vanilla extract.
  • Don't overmix the batter: Overmixing the batter can result in a tough, dense banana bread. Mix just until the ingredients are well combined.
  • Let the banana bread cool completely before slicing: This will help to prevent the bread from crumbling. If you slice the bread while it's still warm, it's more likely to fall apart.

Conclusion:

Mommy's Banana Bread is a classic recipe that is sure to please everyone. With its moist, tender texture and sweet, banana flavor, this bread is perfect for breakfast, lunch, or a snack. Whether you're a seasoned baker or a beginner, this recipe is easy to follow and will yield delicious results. So next time you have some ripe bananas on hand, give Mommy's Banana Bread a try. You won't be disappointed!
