GUMDROP CAKE

Gumdrop Cake image

I don't use baking gums for this. Those things are horrid. If you wouldn't eat them right out of the bag, don't bake with them. Don't use any black ones. Ganong are the best-they don't make black ones. The easiest way to cut them is with scissors dipped in flour.

Tips:

  • Prepare the pan: To prevent the cake from sticking, grease and flour the bundt pan thoroughly.
  • Measure ingredients accurately: Using a kitchen scale to measure ingredients ensures precise measurements, which is crucial for a successful cake.
  • Cream butter and sugar until light and fluffy: This step incorporates air into the mixture, resulting in a tender and moist cake.
  • Add eggs one at a time: Gradually adding eggs helps prevent the batter from curdling.
  • Mix in dry ingredients gradually: Adding the dry ingredients in three additions ensures they are evenly distributed throughout the batter.
  • Do not overmix the batter: Overmixing can develop the gluten in the flour, resulting in a tough cake. Mix just until the ingredients are well combined.
  • Bake the cake at the correct temperature: Ovens can vary, so use an oven thermometer to ensure it is accurate. The cake should be baked at 350°F (175°C) for 1 hour and 10 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool before glazing: Allow the cake to cool for at least 1 hour before pouring the glaze over it. This helps the glaze set properly.
