1 cup boiling water
1 (3 ounce) package lime gelatin
1 (8 1/4 ounce) can crushed pineapple, drained (reserve syrup)
lettuce
mayonnaise

Steps:

  • Pour boiling water on gelatin in bowl, stir until gelatin is dissolved.
  • Add enough water to reserved pineapple syrup to measure 1 cup; stir into gelatin. Chill until thickened but not set.
  • Stir in pineapple.
  • Pour into 4 to 6 individual molds or one 4-cup mold.
  • Chill until firm.
  • Place 2 servings on lettuce and top each with mayonnaise.
  • Can also serve as a dessert by topping with whipped topping.

This is a holiday favorite in the Johnston household. My husband grew up having this for Thanksgiving and Christmas. I usually do it for Easter. As for most of my recipes, this one comes from my late mother-in-law's recipe box.

1 lg. box lime jello
1 lg. pkg. cream cheese
1 20 oz. can crushed pineapple
1 12 oz. pkg. cool whip

Steps:

  • 1. Measure pineapple juice and enough liquid to make 1 1/2 cups, bring to boil & dissolve jello into it. Cool til syrupy & fold into cheese & pineapple which has been mixed together. Fold in cool whip. Chill. Garnish with nuts & maraschino cherries ( dates may be added).
  • 2. Note: though nowhere does it state, I make this in a 9x13 glass pan.

Tips:

  • Use ripe, juicy pineapple. This will give your salad the best flavor. If your pineapple is not ripe, you can ripen it by placing it in a paper bag with an apple for a few days.
  • Chill your salad before serving. This will help the flavors to meld and will also make the salad more refreshing.
