MOLASSES GINGER CAKE
This easy, dense dark cake packs in a lot of flavor. Molasses, a slightly bitter sweetener, is key, giving the cake just the right character. Chopped dates, raisins and a good dose of black pepper are all in evidence, along with ginger and cinnamon. The end result is so good: If you bet you can stop at one slice, you'll surely lose the wager.

MOLASSES SPICE CAKE
This recipe has been in my personal collection for 30 years. The spice flavors are nicely balanced, and the molasses and coffee make it dark and moist. You can use either instant coffee with 1 cup boiling water or brewed coffee in this sheet cake. -Dawn Lowenstein, Huntingdon Valley, Pennsylvania

Steps:
- Cook Time: 50 Minutes Yield: 12 Servings Heat oven to 325 degrees. Sift together flour and salt. Beat egg yolks with rotary or electric beater until thick and lemon-colored. Gradually beat in sugar and molasses. Then, by the clock, beat with rotary or beater (low speed) an additional 3 minutes. Stir in orange rind, lemon rind and juice. Add flour mixture, 1/3 at a time, mixing each addition until smooth. When all flour has been added, beat until light and fluffy. Beat egg whites until stiff enough to stand in peaks, but not dry; fold (by hand) into batter. Bake 45 minutes in an ungreased, 9-inch tube cake pan. Turn cake pan upside down on wire cooler. Tips If cake has not dropped out of pan when cold, loosen from sides with spatula.
Tips:
- Use unsulphured molasses for a richer flavor and color.
- Make sure the butter and eggs are at room temperature before you start baking. This will help the ingredients blend together more easily.
- Do not overmix the batter. Overmixing can make the cake tough.
- Bake the cake in a preheated oven. This will help prevent the cake from sinking in the middle.
- Let the cake cool completely before frosting it. This will help prevent the frosting from melting.
Conclusion:
Molasses sponge cake is a delicious and versatile cake that can be enjoyed for breakfast, lunch, or dinner. It is also a great cake to make for special occasions. With its rich flavor and moist texture, molasses sponge cake is sure to be a hit with everyone who tries it.
