Time 35m

Yield 20

Number Of Ingredients 12

5 cups rolled oats
1 cup blanched slivered almonds
1 cup chopped walnuts
1 cup chopped pecans
1 cup sesame seeds
1 cup wheat germ
2 cups shredded coconut
1 cup unsalted sunflower seeds
1 cup canola oil
1 ½ cups honey
1 cup raisins
1 cup dried cranberries

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large bowl, stir together the oats, almonds, walnuts, pecans, sesame seeds, wheat germ, coconut and sunflower seeds. In a small pan over medium heat, stir together the oil and honey. Cook and stir until blended. You could also do this in a large measuring cup in the microwave, heating for about 2 minutes and 30 seconds. Pour over the oat mixture, and stir to coat evenly. Spread out in an even layer on two cookie sheets.
  • Bake for 20 minutes in the preheated oven, until the oats and nuts are toasted. Immediately after it comes out of the oven, stir in the raisins and dried cranberries. Let stand until cooled, and stir again to break up any large clusters. Store in an airtight container at room temperature for up to two weeks, but I guarantee it won't be around that long!

Yield Makes about 7 cups

Number Of Ingredients 9

Nonstick vegetable oil spray
3 cups old-fashioned oats
1 1/2 cups lightly salted dry-roasted peanuts (about 7 ounces)
1/2 cup sweetened flaked coconut
1/2 cup mild-flavored (light) molasses
1/2 cup (packed) golden brown sugar
1/4 cup water
3 tablespoons vegetable oil
1 cup golden raisins

Steps:

  • Position rack in center of oven and preheat to 325°F. Spray large roasting pan with nonstick vegetable oil spray. Mix oats, peanuts and coconut in prepared roasting pan. Combine molasses, brown sugar, 1/4 cup water and oil in heavy small saucepan. Bring to boil, stirring occasionally. Pour hot molasses mixture over oat mixture; toss to coat well.
  • Bake granola 20 minutes. Stir raisins into granola. Bake until granola is deep golden, stirring frequently, about 15 minutes longer. Transfer pan to rack. Using metal spatula, scrape bottom of pan to loosen granola. Cool completely in pan, occasionally scraping bottom of pan with spatula to prevent granola from sticking.
  • (Can be made 1 week ahead. Store in airtight container at room temperature.)

Tips:

  • Use good quality ingredients: Fresh, high-quality ingredients will result in a more flavorful granola. Look for organic, non-GMO options whenever possible.
  • Toast the oats and nuts: Toasting the oats and nuts before adding them to the granola will help to enhance their flavor and give the granola a more crunchy texture.
  • Make sure the granola is completely dry before storing it: If the granola is not completely dry, it will become soft and chewy over time. Spread the granola out on a baking sheet and bake it at a low temperature until it is completely dry.
  • Store the granola in an airtight container: Once the granola is completely dry, store it in an airtight container in a cool, dry place. This will help to keep the granola fresh and prevent it from becoming stale.
