Steps:

  • To Make Ahead: Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.

  • Whisk flour, baking soda, cinnamon, salt, cloves and ginger in another large bowl until well blended. Stir in crystallized ginger.

  • Preheat oven to 375degreesF. Lightly coat 2 baking sheets with cooking spray.
  • Place the remaining 1/3 cup sugar in a shallow dish. Roll the dough into 1-inch balls and then roll in the sugar. Place 1 1/2 inches apart on the prepared baking sheet.
  • Bake the cookies, in batches, until they crackle on top, 8 to 10 minutes. Transfer to a wire rack to cool.

Tips:

  • To make the perfect molasses crackle cookies, use a kitchen scale to accurately measure your ingredients. This will ensure that your cookies have the right consistency and texture.
  • Make sure your butter is at room temperature before you start baking. This will help the ingredients mix together more easily and create a smoother cookie dough.
  • Chill your cookie dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much in the oven.
  • Bake the cookies until they are just set around the edges but still soft in the center. Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool completely on a wire rack before enjoying them. This will help them set and develop their full flavor.

Conclusion:

Molasses crackle cookies are a delicious and easy-to-make treat that are perfect for any occasion. Just be sure to enjoy them quickly, as they are best eaten fresh.
