MOLASSES CRUMB CAKE

I do not claim this recipe as my own. It is the best molasses crumb cake though. I stalked a woman at church for the recipe. She insists it's the oil that makes it so moist.

MOLASSES SPICE CRUMB CAKE

Molasses Spice Crumb Cake image

I remember my mother making this when I was growing up. I don't know where she got the recipe .. maybe from a family friend. I added some spices to it to adjust to my taste. It's sort of like a PA Dutch Shoofly Pie without the crust! Please note: the batter is VERY thin ... and there is no "typo" .... this cake has no eggs in...

SHOO-FLY CAKE (MOLASSES CRUMB)

Shoo-fly Cake (Molasses Crumb) image

Very much the same as Pennsylvania Dutch shoo-fly pie, just without the crust and wet bottom. Very moist! This can also be made into cupcakes, bake for about 30 minutes. Yummy for breakfast!

Provided by Jane Asher

Categories     Cakes

Time 30m

Number Of Ingredients 7

4 c flour
2 c brown sugar, firmly packed
2/3 c crisco
1 tsp baking soda
1/2 tsp salt
1 tsp canola oil
2 c boiling water

Steps:

  • 1. Mix together flour, brown sugar, and Crisco to make crumbs. Reserve 1cup crumbs for topping.
  • 2. Mix together remaining crumbs with remaining ingredients to make batter. Batter will be runny.
  • 3. Pour batter into greased and floured 9 x 13 pan. Top with reserved crumbs
  • 4. Bake at 350 for 40-45 minutes or until cake tests done.

Tips:

  • Prep Your Ingredients: Before starting, measure and prep all your ingredients. This will make the baking process smoother and more efficient.
  • Use Room Temperature Ingredients: Unless specified otherwise, use ingredients at room temperature. This helps them blend better and creates a more consistent texture.
  • Cream Butter and Sugar Properly: Creaming butter and sugar together until light and fluffy is essential for a tender and flavorful crumb cake. Cream them for at least 2-3 minutes.
  • Mix Dry Ingredients Thoroughly: Whisk together the dry ingredients (flour, baking powder, salt, and spices) to ensure even distribution.
  • Add Eggs One at a Time: Gradually add eggs one at a time, beating well after each addition. This helps prevent the batter from curdling.
  • Don't Overmix the Batter: Mix the batter just until the ingredients are combined. Overmixing can lead to a tough and dense cake.
  • Chill Before Baking: Chilling the batter before baking helps the flavors meld and results in a more tender crumb. Chill the batter for at least 30 minutes, or up to overnight.
  • Bake at the Right Temperature: Bake the cake at the specified temperature in the recipe. Using a higher temperature can cause the cake to brown too quickly, while a lower temperature can result in undercooked cake.
  • Test for Doneness: Insert a toothpick or skewer into the center of the cake. If it comes out clean or with just a few moist crumbs attached, the cake is done. Avoid overbaking, as this can dry out the cake.
  • Cool Before Serving: Let the cake cool completely before serving. This allows the flavors to develop and the crumbs to set.

Conclusion:

With careful preparation, attention to detail, and the right techniques, you can create a delicious and satisfying molasses crumb cake that's perfect for any occasion. Remember to use fresh ingredients, follow the recipe precisely, and take your time to ensure the best results. Whether you're a seasoned baker or just starting out, this classic crumb cake is a must-try recipe that will surely become a favorite. So, gather your ingredients, preheat your oven, and let's bake a delightful molasses crumb cake together!
