This recipe has been in my personal collection for 30 years. The spice flavors are nicely balanced, and the molasses and coffee make it dark and moist. You can use either instant coffee with 1 cup boiling water or brewed coffee in this sheet cake. -Dawn Lowenstein, Huntingdon Valley, Pennsylvania

Tips:

  • Choosing the Right Cake Mix: Opt for a yellow or white cake mix, as they provide a neutral base for the molasses flavor to shine through. For a richer flavor, consider using a chocolate cake mix.
  • Measuring Molasses: Molasses is a thick and sticky ingredient, so it's crucial to measure it accurately. Use a measuring cup specifically designed for liquids and coat it with cooking spray or oil to prevent the molasses from sticking.
  • Mixing the Batter: Ensure all ingredients are at room temperature before mixing. This helps the ingredients combine smoothly and evenly. Mix the batter until just combined to avoid overmixing, which can result in a tough cake.
  • Baking Time and Temperature: Follow the baking time and temperature specified in the recipe. However, keep an eye on the cake during baking as ovens may vary. Insert a toothpick or skewer into the center of the cake; if it comes out clean, the cake is done.
  • Cooling and Frosting: Allow the cake to cool completely before frosting it. This helps prevent the frosting from melting and seeping into the cake. For a more decadent treat, consider making a molasses frosting or glaze to complement the cake's flavor.

Conclusion:

Indulge in the nostalgic flavors of a classic molasses cake with the convenience of a cake mix. With its moist and tender crumb, subtle molasses notes, and easy preparation, this cake is a delightful addition to any dessert spread. Experiment with different frostings and toppings to create a personalized and delectable treat for your loved ones. Embrace the rich heritage of this timeless cake and enjoy its comforting sweetness in every bite.
