- In a big bowl, mix together the goopy mix and set aside for 5 mins. In a small bowl, beat the eggs and buttermilk together. In a medium bowl, sift together the dry mix ingrediants. Stir the dry mix into the goopy mix. Stir breifly, then add the wet mix. Stir together lightly until just mixed. Fill muffin cups and bake at 350 for 25 mins or until muffins spring back lightly when pressed with fingertip. Let cool in pan for 10 mins. While the muffins are cooling in the pan, brush the tops with some more honey and/or orange marmalade.
