BBQ baked beans are a summer staple. This shortcut version relies on ordinary canned baked beans, which we dress up with fresh peppers, onions, cider vinegar and barbecue sauce. The sweet and tangy side dish is perfect for a summer barbecue, picnic, potluck or weeknight dinner. The beans taste even better the next day, so they can be prepared ahead of time and reheated or served at room temperature.

Time 1h40m

Yield 10 servings

Number Of Ingredients 16

2 pounds navy or small white beans, soaked overnight
2 cups chopped white onions
2 cups chopped red onions
1/4 cup minced garlic
1/2 cup red wine vinegar
1 1/2 tablespoons Dijon mustard
1 1/4 tablespoons soy sauce
2 cups dark brown sugar

1 pound canned plum tomatoes
1/2 cup molasses
Honey
Salt and pepper

Steps:

The beans should cook an additional 30 minutes in the sauce so that they are tender and have fully absorbed the flavor.

  • Use high-quality molasses. Look for unsulphured molasses, which has a richer flavor than sulphured molasses.
  • Soak the beans overnight. This will help them cook more evenly and quickly.
  • Don't overcook the beans. They should be tender but still hold their shape.
  • Use a variety of spices. This will give the beans a more complex flavor.
  • Let the beans rest before serving. This will allow the flavors to meld together.
