3 cups grated zucchini
3 cups all-purpose flour
3 tablespoons ground cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup unsweetened applesauce
3 tablespoons vanilla extract
3 eggs
3 tablespoons butter, melted
1 cup chopped walnuts

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Grease 2 8x4-inch loaf pans or 2 12-cup muffin pans.
  • Place the zucchini in a strainer and set aside to drain into a bowl or sink.
  • Sift the flour, cinnamon, baking soda, baking powder, and salt together in a large bowl. Create a well in the middle of the flour mixture; combine the applesauce, vanilla, eggs, butter, walnuts, and drained zucchini in the center of the well. Mix until all ingredients are combined into a batter; pour into the loaf pans.
  • Bake the loaves in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour for loaves or 25 minutes for muffins. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

3 eggs
1 cup oil
2 1/4 cups sugar
2 cups zucchini, grated with skin on
1 1/2 tablespoons cinnamon
2 cups flour
1/4 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
2 tablespoons pure vanilla extract
1 cup chopped nuts (optional) or 1 cup raisins (optional)

Steps:

  • Beat eggs until fluffy.
  • Add oil, sugar, zucchini.
  • Add dry ingredients.
  • Add vanilla and if using , fold in nuts and raisins.
  • Bake at 350°F in 2 greased and floured loaf pans for approx 1 hour, or until toothpick comes out clean.

This recipe was given to me over 40 years ago. I cut the recipe in half, and tweaked to my liking! It is so delicious and moist, a real keeper! We love it! Hope you give it a try!

3 eggs
2 tsp lime peel, grated
2 c sugar
2 c zucchini, grated
1 c vegetable oil
2 1/2 tsp vanilla extract
2 c flour
1 tsp baking soda
1/4 tsp salt
2 tsp cinnamon
1 c walnuts, chopped

Steps:

  • 1. With a spoon, beat eggs and sugar together. Add all ingredients, except zucchini and nuts. Mix well.
  • 2. Now, stir in grated zucchini and chopped nuts.
  • 3. Pour into 2 greased and floured loaf pans. (makes 6 cups of batter, to divide) Bake at 350 degrees for 1 hour, or until toothpick comes out clean when tested for being done.
  • 4. Enjoy!

Tips:

  • Use fresh zucchini. Fresh zucchini has a higher water content than older zucchini, which will result in a moister bread.
