this was originally a recipe I got from a friend and I altered it so much that it became my own. Makes a very nice, moist cake or cupcakes. I like it best with homemade buttercream frosting.

9 tablespoons unsalted butter, softened
3/4 teaspoon salt
1 1/2 cups sugar
1/4 cup powdered sugar
4 teaspoons baking powder
3 cups flour
2 3/4 teaspoons vanilla
1/2 teaspoon almond extract
1 cup milk
4 egg whites

Steps:

  • preheat oven to 350.
  • In small bowl, beat egg whites, 1/4 c milk, vanilla, and almond extract. Set aside.
  • In another bowl, mix together dry ingredients (I use a stand mixer and think it is much easier for this recipe!).
  • Add butter and 3/4 c milk to dry mixture.
  • Mix on low speed until mixed well, scraping the sides of the bowl as necessary.
  • Add egg white/milk/vanilla mixture slowly while mixing at low speed.
  • Mix on low speed or by hand until well mixed.
  • Bake 22 - 32 minutes until toothpick inserted into center comes out clean.
  • BE CAREFUL! This cake does not brown as much as most cakes so be careful NOT to overbake!
  • Wait until completely cooled before frosting.

1 box (18.25 ounce) white cake mix ( i use french vanilla)
1 c sifted cake flour
1 c white sugar
3/4 tsp salt
1 1/3 c whole milk
1 c sour cream
2 Tbsp canola oil
2 tsp real vanilla extract
4 medium egg whites

Steps:

  • 1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour an 11x13 inch cake pan, or two 9 inch round cake pans
  • 2. Stir together the white cake mix, flour, sugar, and salt in a large bowl until well mixed. Pour in the milk (or water), sour cream, vegetable oil, and vanilla extract, and egg whites, and beat with an electric mix on low until all the ingredients are mixed and moistened about 4 minutes 3. Pour the batter into the prepared cake pan, and bake in the preheated oven until the top is a light golden brown and a toothpick inserted into the center of the cake comes out clean, about 35 minutes. Allow to cool before frosting.

3 cups cake flour
1 3/4 cups sugar
1 1/4 cups water
1/2 cup shortening
3 tablespoons water
3 tablespoons oil
2 teaspoons baking powder
2 1/2 teaspoons baking powder
1 teaspoon salt
1 1/2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees. Grease and flour two cake pans (I usually use 9" round). Mix together 3 T. water, 3 T. oil, 2 teaspoons baking powder. In a large bowl, combine all ingredients. Using an electric mixer, beat until well mixed, approximately 4 minutes. Pour batter into cake pans. Bake 40 to 45 minutes, or until toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks.
  • Frost when completely cooled.
  • Note: Baking powder is intentionally listed twice in this recipe. The combination of 3 T. water, 3 T. oil, 2 teaspoons baking powder; mixed together is the substitution for 2 eggs.
