Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

3 cups soft white bread cubes
1 large egg
2/3 cup milk
1 tablespoon mustard
1 1/2 teaspoons salt

1 onion, chopped
1/2 cup chopped celery, including leaves

2 pounds ground beef

Steps:

  • Pre-heat oven to 350 degrees. Place bread cubes in a large bowl. Beat egg and milk together in a small bowl, then pour over bread cubes. Let stand until bread absorbs milk, about 15 minutes. Mash and stir mixture until bread is in very small chunks. Add mustard, salt, pepper, basil, thyme, onion, celery and parsley. Mix well. Add ground beef and mix well. DRY INGREDIENTS
1/2 tsp dried ground sage
1 tsp salt
1/4 tsp black pepper
2/3 c italian bread crumbs
2 tsp dried minced onion
WET INGREDIENTS
3/4 c milk or 1/2 & 1/2
2 eggs, slightly beaten
ADDITIONAL INGREDIENTS
1 1/2 lb ground beef chuck
SAUCE (ADD LAST 35-45 MINUTES OF COOKING TIME)
1/4 c ketchup
1/2 tsp worcestershire sauce
3 Tbsp brown sugar
1/2-1 tsp dried mustard
1/4 tsp garlic powder
1/4 tsp natural hickory liquid smoke, optional but yummy

Steps:

  • 1. In a large plastic ziplock bag, combine all dry ingredients. Then, add the wet ingredients to the bag and mix thoroughly.
  • 2. Add ground beef chuck until uniformly mixed. Try not to over mix. Form into a round loaf. (I usually refrigerate for a little while to firm up, but it's not necessary. In fact, you can make the loaf the day before and refrigerate until ready to use.)
  • 3. Cut 2 lengths of aluminum foil approximately 29" long. Fold lengthwise 3 times. You will end up with two strips of foil approximately 3 1/2" x 29" long. Spray your crock pot with butter flavored cooking spray. I use a standard-size crock pot, approximately 9" across its round top. Place your two lengths of foil in the form of an "X" in the crock pot. This will act as a sling to lift the meatloaf out easily when it is done cooking. Spray foil with non-stick spray as well. If ends stick out of the top of the crock pot, simply fold them down into the pot.
  • 4. Add meatloaf to crock pot. Cover and cook on low for 5-5 1/2 hours. About an hour before the meatloaf is done, combine all of sauce ingredients. Pour sauce on top of meatloaf 35-45 before the end of cooking time.
  • 5. When meatloaf is done, lift carefully out of crock pot with your foil sling to a serving platter.

This recipe makes makes a moist and tender meatloaf without being mushy. I added fresh herbs I had on hand but you can use dried herbs, just use a little less. I made this for friends and family, not realizing some were not meatloaf lovers until they admitted after tasting mine that they were converts! I think the mixture of pork and ground beef makes a real flavor and texture difference. If you don't have creole seasoning (I put Tony Chachere's in almost everything) just sub seasoning or regular salt. The topping is borrowed from Paula Deen after reading rave reviews of her sauce. I was skeptical of the addition of mustard but you don't taste it at all. Be sure to let the loaf rest 5-10 min to set. I use that time to whip my potatoes and reheat my mushroom gravy. Serve with my oven roasted ratatouille also for an easy and complete meal!

  • Saute onion, bell pepper and garlic in a little oil over medium heat until translucent, about 3-5 minutes. Set aside to cool.

  • Stir to combine with one hand while you add milk with the other* until all ingredients are uniformly mixed. Do not squish the ingredients together, this may make the meatloaf tough and dense.
  • Form into a loaf placed in baking dish. Stir together topping ingredients and brush on meatloaf.

  • Let rest 3-5 minutes before slicing.

1 1/2 cups onions, chopped
1 tablespoon garlic, minced
1 teaspoon salt

1 cup quick oats (not instant)
1/2 cup plain yogurt

2 lb lean ground beef
2 eggs
1 c bread crumbs
1/2 c red bell pepper, diced fine ( i don't always use this)
1 small onion, chopped small (about 1/2 cup)
8 oz beef broth
1 tsp dried sage
1 tsp dried thyme
1 tsp salt
1/4 tsp pepper
3 Tbsp brown sugar
1 tsp dry mustard
4 Tbsp ketchup

Steps:

  • 1. Preheat oven to 325 degree F. I don't use a loaf pan. I line a sheet pan with foil and shape my loaf. Spray foil with cooking spray.
  • 2. Mix all but the last 3 ingredients well. Shape into loaf. Place in loaf pan or on sheet pan. Bake for 1 hour and 15 minutes.
  • 3. Remove from oven. Mix the last 3 ingredients and spread over meatloaf. Return to oven for another 15 minutes. Let rest for 5 to 10 minutes before cutting. Enjoy!

1 leek, washed and chopped (white part and some green)
1 small onion, peeled and chopped
2 garlic cloves, peeled and minced
1 tablespoon all-purpose flour
1/2 cup red wine
1/2 cup low sodium chicken broth
6 ounces tomato sauce
1 teaspoon dried basil (or 1 tbls fresh, minced)
1 teaspoon dried oregano
salt, to taste
1 lb ground turkey
1 tablespoon all-purpose flour
1 whole egg
2 egg whites
1/2 cup raw zucchini, chopped (or shredded-no need to peel)
salt and pepper, to taste

Steps:

  • Preheat oven to 350°F Coat 4 x 8-inch loaf pan with nonstick cooking spray.
  • Heat oil in a large skillet over medium heat. Add leek, onion, and garlic. Sauté until just golden brown. Add flour, stir and cook for 2 minutes.
  • Add wine, broth, tomato sauce, basil, oregano, and salt to skillet. Bring to boil, reduce heat to low and simmer uncovered for 15 minutes. Set sauce aside.
  • In large bowl, combine ground turkey, egg, egg whites, zucchini, and flour. Mix well. Add 1/4 cup sauce, and stir in gently.
  • Form meatloaf in prepared loaf pan. Cover with foil.
  • Bake for 40 to 50 minutes. (Remove foil last 10 minutes if desired, to brown top of loaf). Remove from oven and let rest 10 minutes.
  • Re-heat remaining sauce and serve with meatloaf.

2 lb beef, ground
1 lb turkey, ground
1 c milk
4 slice bread, whole wheat or white
1 pkg vegetable soup mix, dried
2 Tbsp a-1 sauce
1 c fresh parsley, chopped fine
2 Tbsp butter
1/2 c nance mustard, sharp & creamy
kosher salt and ground black pepper

Steps:

  • 1. Prep: Pre-heat oven to 325 degrees. In a flat dish or bowl, soak the 4 slices of bread in milk.
  • 2. Dump the following ingredients into a large mixing bowl: ground turkey ground beef dried vegetable soup mix A-1 sauce salt and pepper freshly minced garlic and onion finely chopping fresh parsley squeeze excess milk from bread and add to mixing bowl.
  • 3. With clean hands, GENTLY squeez the ingredients together until all ingredients are thoroughly incorporated. (Stirring or squeezing hard will toughen the meat mixture.)
  • 4. Turn mixture onto a cookie sheet and shape into an oval loaf. This will create large, lovely pieces when slicing the meatloaf. Use a butter knife to create a hole in the center of the loaf and insert the 2 tablespoons of butter. Push meatloaf back together firmly to trap butter. Coat top and sides with a heavy layer of A-1 Suace, topped with another layer of Nance Mustard.
  • 5. Cook for 45 to 50 minutes or until a pierced center shows clear juice. Also, the layers of A-1 and Nance mustard should appear as thick glaze. Remove meatloaf from oven and IMMEDIATELY cover with foil, over the top and down the sides to trap the steam. Allow meatloaf to rest 5 minutes. (Juices will return to center of the meatloaf and will not run all over the serving plate.)
  • 6. Move meatloaf to a serving plate and garnish with fresh springs of parsley.
  • 7. Secrets: The dried vegetable soup mix adds color and herbs. Soaking the bread in milk & adding butter to the center will keep the meatloaf moist and juicy. Finely chopping/mincing the onions, garlic and parsley allows the slices to remain solid & pretty.
