EASY CREAMY LEMON CHICKEN

Easy Creamy Lemon Chicken image

This easy skillet creamy lemon chicken is a winner! Tender pan-seared chicken served with a creamy and tangy lemon garlic sauce. It's a quick 30 minute weeknight option!

Provided by Tania

Categories     Main Course

Time 30m

Number Of Ingredients 13

2 large chicken breasts
Salt and pepper
1 teaspoon Italian herb seasoning
½ cup all-purpose flour
Olive oil
3 cloves garlic, minced
2 tablespoons unsalted butter
½ cup chicken broth
2 tablespoons fresh lemon juice, plus more to taste
1 cup heavy cream
Salt and pepper to taste
Fresh chopped parsley for garnish
Lemon slices for garnish

Steps:

  • Cut each chicken breast in half lengthwise to get thinner cutlets. Over plastic wrap, slightly pound the chicken to even thickness as needed using a meat mallet. This is for even cooking and to tenderize the chicken a bit.
  • Season both sides of the chicken cutlets with salt, pepper, and Italian seasoning (per chicken cutlet, use about ¼ teaspoon each: Kosher salt, ground black pepper, Italian herb seasoning). Dredge the seasoned chicken in flour and shake off any excess.
  • Heat some olive oil in a large nonstick skillet over medium heat. Cook prepared chicken on both sides, about 4-5 minutes per side, until golden brown or until internal temperature reaches 165 degrees F. Remove chicken from pan and set aside.
  • Don't wipe the pan clean. Melt 2 tablespoons unsalted butter, then add garlic, and cook until fragrant. Add chicken broth and 1 tablespoon lemon juice. Taste it, and add the second tablespoon of lemon juice if desired (I ended up adding 2 tablespoons). Bring to a light simmer. Then, stir in heavy cream plus salt and pepper to taste until evenly combined.
  • Return chicken to pan and bring to a simmer. Simmer for another 4-5 minutes until the sauce has thickened a bit.
  • Serve with lemon slices and freshly chopped parsley. Enjoy!

LEMON ROSEMARY ROASTED CHICKEN

Lemon Rosemary Roasted Chicken image

This juicy and crispy lemon rosemary whole chicken is roasted to perfection. It's so easy to make and packed with flavor.

Provided by Tania

Categories     Main Course

Time 1h55m

Number Of Ingredients 12

1 4-pound whole chicken ((giblets removed))
2 yellow onions, peeled and quartered ((as many as will fit inside the cavity))
1 to 2 large lemons, quartered ((as many as will fit inside the cavity))
3 sprigs fresh rosemary
2 teaspoons Kosher salt
1/2 teaspoon ground black pepper
1-2 cans chicken broth ((only if using a pan with a roasting rack))
8 tablespoons unsalted butter, softened
5 cloves garlic, minced
2 teaspoons fresh rosemary leaves, minced ((See note below))
2 teaspoons herbs de provence
Zest of 1 lemon

Steps:

  • Preheat oven to 425 degrees F. Position rack in lower third of the oven.
  • Make the herbed butter: in a bowl, combine the softened unsalted butter, minced garlic, minced rosemary, herbs de provence, and lemon zest. Set aside.
  • Pat the chicken dry. Rub the chicken all over with the herbed butter, including under the skin (carefully separate the skin from the flesh to create "pockets" for the butter). Season the chicken generously with salt and pepper, including the insides of the cavity.
  • Stuff the cavity with the lemon, onion, and the rosemary sprigs...as many as you can fit inside. Tie chicken legs using kitchen twine. Tuck in wings under the chicken's back, or clip the wing tips to prevent them from burning.
  • Place the prepared chicken in a roasting pan, breast side up. Place the remaining lemons and onions on the pan. If using a pan with a roasting rack, add about 1-2 cups of chicken broth over the pan, about 1/4 inch deep. This will prevent the drippings from burning.
  • Roast the chicken for about 1 hour and 20 minutes, basting with the drippings halfway through. If needed, rotate the pan if you notice certain spots browning more than others - some ovens have hot spots. The chicken is ready when the a meat thermometer inserted in the thickest part of the thigh registers 165 degrees F. Note: roast for 20 minutes per pound.
  • Remove from oven. Tent with foil, and let rest for 15-20 minutes. Carve the chicken and serve. Enjoy!

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 10

1/4 cup good olive oil
3 tablespoons minced garlic (9 cloves)
1/3 cup dry white wine
1 tablespoon grated lemon zest (2 lemons)
2 tablespoons freshly squeezed lemon juice
1 1/2 teaspoons dried oregano
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
4 boneless chicken breasts, skin on (6 to 8 ounces each)
1 lemon

Steps:

  • Preheat the oven to 400 degrees F.
  • Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.
  • Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.
  • Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.

WEEKNIGHT LEMON CHICKEN BREASTS WITH HERBS

Weeknight Lemon Chicken Breasts With Herbs image

Boneless chicken breasts suffer a bad reputation, owing in large part to their propensity to dry out. The solution here is a lovely bath in an ample amount of olive oil, white wine and lemon, which seasons and tenderizes the chicken. Later, the marinade becomes an easy pan sauce once it cooks with the breasts. Use fresh herbs in the summer; in the winter, dried herbs will do the trick.

Time 1h20m

Yield 4 servings

Number Of Ingredients 8

4 medium boneless, skinless chicken breasts (about 8 ounces each)
1 1/2 teaspoons kosher salt
1 1/4 teaspoons ground black pepper
1/2 cup olive oil, plus 2 tablespoons
1 lemon, thinly sliced into rounds, seeds discarded
1/4 cup dry white wine
3 garlic cloves, smashed
1 tablespoon dried herbes de Provence, or 3 tablespoons chopped fresh herbs, such as sage, rosemary and thyme

Steps:

  • Season the chicken breasts all over with the salt and pepper. Transfer the chicken to a gallon-size resealable freezer bag. Add 1/2 cup olive oil and the remaining ingredients, press out the air and seal the bag tightly so the chicken is fully submerged. Massage the chicken through the plastic bag to evenly distribute the herbs. Let marinate in the refrigerator for 1 hour or up to 8 hours.
  • In a large, deep skillet with a lid, heat the remaining 2 tablespoons olive oil over medium. Remove the chicken from the marinade, add to the skillet, then pour the lemons and marinade on top. Cook until the chicken is golden on one side, about 8 minutes. Turn the chicken, cover and cook over medium-low until chicken is cooked through, about 7 minutes. Serve chicken topped with lemons and sauce.
