Time 45m

Yield 6-8 serving(s)

Number Of Ingredients 9

2 cups flour
2/3 cup unsweetened cocoa powder
1 1/4 teaspoons baking soda
1/4 teaspoon baking powder
3 eggs
1 2/3 cups sugar
1 teaspoon vanilla extract
1 cup Hellmann's mayonnaise
1 1/3 cups water

Steps:

  • Preheat oven to 350. Grease and lightly flour 2 9-inch round cake pans, set aside.
  • In medium bowl, combine flour, cocoa, baking soda and baking powder; set aside.
  • In large bowl, with electric mixer at high speed, beat eggs, sugar and vanilla for 3 minutes or until light and fluffy. Beat in hellmanns real mayonnaise at low speed until blended. Alternately beat in flour mixture with water, begining and ending with flour mixture. Pour into prepared pans.
  • Bake 30 minutes or until toothpick inserted in centers comes out clean. On wire racks, cool 10 minutes; remove from pans and cool completely. Frost,if desired, or sprinkle with confectioners sugar.

Tips:

  • Use room temperature ingredients: This helps the ingredients blend together more easily and creates a smoother batter.
  • Do not overmix the batter: Overmixing can toughen the cake. Mix just until the ingredients are combined.
  • Bake the cake until a toothpick inserted into the center comes out with just a few moist crumbs attached: If the toothpick comes out clean, the cake is overbaked.
  • Let the cake cool completely before frosting it: This helps the frosting set properly.
  • For cupcakes, fill the liners only 2/3 full: This prevents the cupcakes from overflowing.
  • Store the cake or cupcakes in an airtight container at room temperature for up to 3 days: You can also store them in the freezer for up to 2 months.

Conclusion:

This moist deep chocolate mayonnaise cake or cupcakes recipe is a delicious and easy-to-make treat that is perfect for any occasion. The cake is moist and flavorful, and the frosting is rich and creamy. Whether you make it as a cake or cupcakes, this recipe is sure to be a hit.
