Best apple cake we've ever eaten. I've taken three recipes and combined them to create what my family now requests for birthdays! We think the cake is better once it sits for awhile. Even refrigerated and then heated back up, the flavors seem to really stand out. You can substitute pecans for the walnuts.

SUPER MOIST FRESH APPLE CAKE

Super Moist Fresh Apple Cake image

This is one of those cakes that, well, the longer it sets, the better it gets. Oh, don't get me wrong, it is just as delicious warm and fresh out of the oven. The added bonus to this lovely cake is that instead of drying out, it gets more moist as the days pass on, if it lasts that long...

Time 1h5m

Yield 1 Cake

Number Of Ingredients 12

3 eggs
1 1/2 cups oil
2 cups sugar
3 cups flour, sifted
1 teaspoon salt
1 teaspoon baking soda
1 cup pecans or 1 cup walnuts, chopped
2 teaspoons vanilla
4 Granny Smith apples, about 3 1/2 apples (1 shredded, the others chopped fine)
1 cup light brown sugar
1/2 cup butter
1/2 cup milk

Steps:

  • Cream together the eggs, oil and sugar.
  • In a separate bowl, sift the flour, salt and baking soda.
  • Combine all.
  • Now add your nuts, vanilla and apples.
  • Note~this batter is VERY stiff, don't worry, it's suppose to be that way. When the apples cook they add plenty of moisture to the cake to make it moist. Plus, your going to add more moisture when your glaze soaks inches.
  • Pour into a greased and floured 9 X 13 cake pan. Bake at 350 for 45 minutes or until a toothpick comes out clean from the center of the cake.
  • In a sauce pan, combine your glaze ingredients and boil for a few minutes. Set aside.
  • When cake is done, puncture the top of cake with a fork, quite a bit. Pour on your glaze.

Tips:

  • Use fresh applesauce. Fresh applesauce will give your fruitcake a more intense apple flavor. If you don't have fresh applesauce, you can use store-bought unsweetened applesauce.
  • Don't overmix the batter. Overmixing the batter will make your fruitcake tough. Mix the batter just until the ingredients are combined.
  • Use a variety of dried fruits. This will give your fruitcake a more complex flavor. Some good choices include raisins, cranberries, cherries, and apricots.
  • Soak the dried fruits in alcohol. This will help to plump them up and give them a more intense flavor. You can use any type of alcohol you like, but rum, brandy, or bourbon are all good choices.
  • Bake the fruitcake at a low temperature. This will help to prevent the cake from drying out. Bake the cake at 250 degrees Fahrenheit for 2-3 hours, or until a toothpick inserted into the center comes out clean.
  • Let the fruitcake cool completely before serving. This will help the cake to set and develop its flavor.

Conclusion:

Moist applesauce fruitcake is a delicious and festive holiday treat. It's easy to make and can be customized to your liking. With its moist texture, rich flavor, and variety of dried fruits, this fruitcake is sure to be a hit with everyone who tries it.
