⅓ cup honey
1 large egg, at room temperature
½ tablespoon vanilla extract
¼ cup olive oil
1/4 cup unsweetened vanilla almond milk (or milk of choice)

½ teaspoon salt
Mix-ins
½ cup chopped walnuts, plus ¼ cup chopped walnuts for sprinkling on top of muffins

  • Mash the bananas well: This will help to ensure that the muffins are smooth and moist.
  • Don't overmix the batter: Overmixing can lead to tough muffins.

  • Bake the muffins at 350 degrees Fahrenheit for 20-25 minutes: Or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for 5 minutes before transferring to a wire rack: This will help to prevent them from sticking to the pan.
