MODERN WALDORF SALAD

A Waldorf salad inspired my pasta dish. I use smoked turkey, apples, strawberries and orecchiette. Rotisserie chicken and other fruits would also taste fabulous. -Sonya Labbe, West Hollywood, California

Yield Serves 6

Number Of Ingredients 12

1/4 cup low-fat mayonnaise
1/4 cup nonfat plain yogurt
2 tablespoons orange juice
2 teaspoons grated orange peel
1/2 teaspoon Cajun seasoning
1 head romaine lettuce
1 grapefruit
1 firm but ripe Bosc pear, peeled, cored, diced
1 tart green apple (such as Pippin), peeled, cored, diced
1 cup seedless grapes, halved
1/3 cup chopped dates
1/4 cup pine nuts, toasted

Steps:

  • Mix mayonnaise, yogurt, orange juice, orange peel and Cajun seasoning in small bowl to blend. (Dressing can be prepared 1 day ahead. Cover and refrigerate.)
  • Line large bowl with large outer leaves of lettuce. Chop enough remaining leaves into bite-size pieces to measure 6 cups (reserve remaining lettuce for another use). Place chopped lettuce in another large bowl. Using small sharp knife, cut off peel and white pith from grapefruit. Cut between membranes to release grapefruit segments. Cut segments in half. Place in bowl with chopped lettuce. Add diced pear, diced apple, halved grapes and chopped dates. Add dressing to salad and toss to coat.
  • Transfer salad to leaf-lined bowl. Sprinkle salad with pine nuts and serve.

Tips:

  • To make the salad more colorful, use a variety of apples, such as red, green, and yellow. You can also add other fruits, such as grapes, pears, or berries.
  • For a sweeter salad, use sweeter apples, such as Honeycrisp or Fuji. For a tarter salad, use tarter apples, such as Granny Smith or Braeburn.
  • If you don't have celery on hand, you can substitute with jicama or fennel.
  • To make the dressing, you can use either mayonnaise or Greek yogurt. If you're using mayonnaise, you can lighten it up by using half mayonnaise and half Greek yogurt.
  • To make the salad ahead of time, prepare the dressing and chop the apples and celery. Store the dressing and chopped apples and celery separately in the refrigerator for up to 2 days. When ready to serve, combine the dressing, apples, celery, and walnuts in a bowl and toss to coat.

Conclusion:

This modern Waldorf salad is a delicious and refreshing salad that is perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. Whether you're looking for a light lunch or a side dish for your next dinner party, this salad is sure to please everyone.
