2 cups packed brown sugar
1/2 cup butter, melted
1 tablespoon vanilla extract
4 large eggs, beaten
1 cup cooked pinto beans, mashed
1 unbaked pie shell (10 inches)
Whipped cream or vanilla ice cream

Steps:

  • In a bowl, beat together the sugar, butter, vanilla and eggs. Stir in beans. Pour into pie shell. , Bake at 350° for 45-50 minutes or until a knife inserted in the center comes out clean. Serve warm or chilled with whipped cream or ice cream.

1 prepared 8 inch pie crust
3 eggs, beaten
⅔ cup packed brown sugar
½ cup white sugar
1 teaspoon vanilla extract
2 tablespoons butter, melted
⅔ cup rolled oats
⅔ cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl combine eggs, brown sugar, and white sugar. Beat well. Stir in vanilla extract and melted butter or margarine. Mix thoroughly. Fold in oats and coconut. Pour into pie shell.
  • Bake in preheated oven for 30 minutes. Cool before serving. Top with whipped cream if desired.

¼ cup unsalted butter
½ cup packed brown sugar
½ teaspoon ground cinnamon
1 pinch ground cloves
1 pinch salt
1 cup dark corn syrup
3 eggs
1 ¼ cups wheat and barley flake cereal

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

2/3 c margarine/butter, melted
2/3 c granulated sugar
2/3 c light corn syrup
2/3 c regular rolled oats
1/4 tsp salt
1 tsp vanilla extract
1 unbaked 9-inch pie crust (i use a deep dish, forzen pie crust)

Steps:

  • 1. Combine the eggs, margarine, sugar, corn syrup, oats, salt and vanilla in a bowl. Mix well.
