I found this recipe in a specials' flier from Publix supermarket. It's delicious! You can also substitute a bag of mixed cauliflower/broccoli for a tasty variation.

1/2 cup shredded monterey jack and cheddar cheese blend
1/4 cup sour cream
2 tablespoons butter
1/4 teaspoon pepper

  • Cover and microwave on HIGH 8 minutes.

1 head cauliflower
4 tablespoons butter
4 ounces parmesan cheese
1/2 cup mayonnaise
1 teaspoon horseradish
1 teaspoon rosemary
1/4 teaspoon garlic powder
1 teaspoon salt
1 teaspoon chicken bouillon

Steps:

  • Microwave cauliflower and butter in covered microwave dish for 5-10 minutes, until very soft. (Do not add water and do not drain after cooking)
  • Grate Cheese.
  • Add bullion,garlic, rosemary and horseradish.
  • Use stick blender to combine and mash.
  • If you need to wrap up other things before serving set to the side at this point.
  • Right before serving reheat in microwave, blend again with stick blender.
  • Add mayonnaise to taste.

2 tablespoons whipping cream
2 tablespoons butter or 2 tablespoons margarine

  • Boil the cauliflower until it is very tender (about 15 minutes) drain and place into a mixing bowl add salt, pepper, butter, and any other spice to taste and begin mixing with a mixer add whipping cream slowly as you are mixing (be careful not to add too much!)   • Set a stockpot of water to boil over high heat. Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well. While still hot, add the other ingredients, except the chives. Puree with immersion blender. Garnish with chives, and serve hot with pats of butter. Hint: Try roasting the garlic and adding a little fresh rosemary for a whole new taste.

2 heads of cauliflower, or 2 bags of frozen cauliflower florets
8 oz cream cheese, room temperature
1 pt sour cream
2 eggs
salt and pepper to taste

Steps:

  • 1. If using fresh cauliflower(more work, but my preference), cut the florets away from the core. Then cut larger florets into quarters and medium sized in half.
  • 2. Place cauliflower in large pot of salted, rapidly boiling water and cook on medium heat until very tender - about 30 minutes.
  • 3. Drain in large colander.
  • 4. Using cheesecloth or a non-terrycloth tea towel and working in batches, squeeze as much liquid out of the cooked cauliflower as possible. This is imperative to achieve the correct consistency.
  • 5. Put all ingredients into a food processor and pulse until very smooth. If you don't have a food processor, use a potato ricer or masher.
  • 6. Put pureed mixture into a buttered baking dish and bake in a preheated 350 degree oven for 25 - 30 minutes or until the top begins to brown.
