1/2 c real mayonnaise
1/2 tsp lemon juice (or to taste)

Steps:

  • 1. Melt the butter (I use 'I can't believe it's not butter' light) in the microwave
  • 2. Whisk in the mayonnaise (I use Hellmann's light) and the lemon juice
  • 3. Let sit at room temperature until veggies are cooked, then pour sauce directly onto them. The heat from the veggies heats the sauce.
  • 4. This is a great quickie sauce for broccoli, asparagus or quick eggs benedict.

1 part butter
to taste lemon juice, fresh

Steps:

  • 1. In a small microwaveable bowl, melt the butter and let cool. Mix in mayonnaise (NOT Miracle Whip) and add a squeeze of fresh lemon juice to taste. Whisk together until smooth. If it is too thick, warm slightly or add a tiny bit of hot melted butter and rewhisk. Serve over anything savory. (My option)

4 eggs
2 english muffins, halved
8 oz canadian bacon, sliced
4 tomato slices, 1/4 inch thick slices
paprika
fresh spinach leaves, washed and drained
MOCK HOLLANDAISE SAUCE
4 oz fat free cream cheese
3 Tbsp plain nonfat yogurt
1 Tbsp fresh lemon juice
1 tsp dijon mustard

Steps:

  • 1. Bring water to a boil in a large saucepan over high heat. Reduce heat and simmer.
  • 2. Carefully break one egg into a small dish and slide egg into water. Repeat with remaining eggs. Simmer, uncovered, about 5 minutes or until yolks are just set.
  • 3. Meanwhile, toast muffin halves and place on serving plates. Top each muffin half with spinach leaves, 2 oz. Canadian bacon, 1 tomato slice and 1 egg. Spoon 3 tablespoons hollandaise over each egg. Sprinkle with paprika.
