2 cups (3oz/90g) Corn Flake cereal, crushed
1/2 cup (4oz/120g) Butter
2 teaspoons Cinnamon
3 tablespoons sugar
Vanilla Ice Cream

Steps:

  • Line a small tray with parchment paper.
  • Pre-scoop and form ice cream into approx 2 1/2″ balls
  • Place in the freezer to firm up while making the corn flake mixture.
  • Pulse corn flakes in food processor to crush into fine crumbs.
  • Melt butter in a medium skillet over medium heat, then stir in crushed corn flakes and cinnamon and cook stirring constantly for 5 minutes or until golden brown.
  • Remove from heat and stir in the sugar.
  • Transfer the corn flake crumbs into a shallow dish and allow to cool.
  • Once cooled place ice cream ball into mixture and roll to evenly coat.
  • Press corn flake mixture around outer surface if a thicker coating is desired.
  • Garnish with chocolate sauce, whipped cream and cherries.

2 tablespoons caramel topping

Steps:

  • Remove cover from yogurt; stir well with spoon. Recover, and place in freezer, stirring every 15 minutes until consistency of soft serve, 30 to 45 minutes. Meanwhile, reserve 1/4 cup cereal; set aside. Coarsely crush remaining cereal; place in small bowl.
  • Stir reserved 1/4 cup cereal into frozen yogurt, forming a ball. With spoon, remove yogurt ball, and place in bowl with coarsely crushed cereal. Roll ball around in crumbs, or spoon crumbs over ball until completely covered with crumbs.
  • Place on serving plate. Drizzle with caramel topping. Serve immediately.

1 quart vanilla ice cream
1/4 cup packed brown sugar
1 tablespoon butter, melted
1 teaspoon ground cinnamon
2 cups crushed cornflakes
Optional: Whipped cream and caramel ice cream topping

Steps:

  • Preheat oven to 350°. Using a 1/2-cup ice cream scoop, place 8 scoops of ice cream on a baking sheet. Freeze until firm, about 1 hour. Meanwhile, combine brown sugar, butter and cinnamon. 1 quart vanilla ice cream
3 cups crushed cornflakes cereal
1 teaspoon ground cinnamon
3 egg whites
2 quarts oil for frying

Steps:

  • Scoop ice cream into 8 - 1/2 cup sized balls. Place on baking sheet and freeze until firm, about 1 hour.
  • In a shallow dish, combine cornflakes and cinnamon. In another dish, beat egg whites until foamy. Roll ice cream balls in egg whites, then in cornflakes, covering ice cream completely. Repeat if necessary. Freeze again until firm, 3 hours.
