Steps:
- MAKE THE BAVARIAN CREME: Lightly oil a round, shallow casserole or bowl approximately 10 inches in diameter.
- Line it with a layer of plastic wrap large enough to overhang the edges.
- In a small cup, sprinkle the gelatin over 1/4 cup of the milk; set aside.
- In another small cup, stir the coffee into the cognac; set aside.
- In a saucepan, scald the remaining 1 cup milk.
- Meanwhile, whisk together the egg yolks, sugar and salt until light and fluffy.
- Gradually beat in the scalded milk.
- Return the mixture to the saucepan and stir constantly over moderate heat until thick enough to coat the back of the clean spoon. DO NOT ALLOW TO BOIL.
- Transfer custard to a large bowl and whisk in the reserved gelatin and coffee mixtures, beating to thoroughly dissolve the gelatin.
- Cool to room temperature, whisking vigorously every couple of minutes to prevent lumping.
- When the custard is cool but not set, whip the cream until almost stiff.
- Whisk a large spoonful of the cream into the custard, then gently fold in the remaining cream.
- Carefully pour the bavarian cream into the prepared plastic lined bowl.
- Refrigerate, covered until firm. (This may be made one day ahead.).
- MAKE THE HAZELNUT JAPONAISE: Preheat the oven to 250.
- Butter and flour a baking sheet, preferably nonstick, and trace a 10 inch circle onto it, using a cake pan or pot lid as a guide.
- Blend together the hazelnuts, 1/2 cup of the superfine sugar and the cornstarch; set aside.

- Using a thin metal spatula, loosen the baked meringue layer from the baking sheet. ( the meringue may tear slightly, but it will not show.).
- If it is too fragile to remove from the sheet, cool it on its baking sheet set on a wire rack, and then loosen from the sheet.
- MEANWHILE, PREPARE THE CHOCOLATE GENOISE: Preheat a second oven, of you have one to 350; otherwise, when the meringue is done, raise the heat to 350.
- Lightly butter a round, flat pan at least 12 inches in diameter.
- Line the bottom of the pan with a circle of waxed paper or parchment.
- Lightly butter and flour the paper and sides of the pan.

- Cool slightly.
- Into a small bowl, sift the flour and cocoa together.
- In a large bowl, beat the eggs and the granulated sugar until very light, foamy and almost tripled in volume.
- Add vanilla, then lightly but rapidly fold the flour-cocoa mixture into the eggs.
- When the ingredients are almost but not quite homogeneous, fold in the melted butter.
- Pour the batter into the prepared pan and bake for 10 to 14 minutes, or until the cake springs back when toughed gently.
- Remove from the oven and cool briefly in the pan.
- Invert a pie plate with slanted sides onto a cooling rack, then cover the pie plate with a kitchen towel.
- Lightly sprinkle the towel with confectioners sugar and invert the genoise onto the towel.

I found a couple of pictures that may be representative and Mom's directions are kind of cryptic. I will share a picture of the recipe so you can see it, too. I've examined some other Mocha Torte Recipes to...

Steps:
- 1. CAKE: Separate and beat the yolks (reserve the whites), adding the sugar a little at a time.
- 2. Add the flour, stir to incorporate, then add the nuts and stir. NOTE: If you cannot find ground nuts you can grind them yourself in a food processor. To keep from making nut butter, use 1/4 C of the sugar to help grind the nuts.
- 3. Beat the egg whites to stiff peaks and then fold into above mixture and pour into two well greased 8" round cake pans. (May need to line pans with parchment paper.)
- 4. Bake 300, for 45 minutes After baked, let cool 20 minutes, and then remove from pans and let cool completely. I am not really sure how many layers this will make. I've provided for two layers but a whole pint of whipping cream between 2 layers seems excessive, so, perhaps it makes 3 or 4 layers (each layer cut in half ?) which would make better sense (to me, at least).
- 5. THE FILLING: Whip the cream, gradually add the cocoa, powdered sugar and coffee essence, while continuing to beat.
- 6. Assemble: Place bottom layer on decorative plate, spread 1/3 of the filling to within 1 inch of outside edge, position another layer on top and repeat, ending up with last cake layer on top.
- 7. FROSTING: cream the butter, 1 C of sugar, and the cocoa essence... if you need to adjust the consistency either add more sugar or a little more butter. More butter will make it lighter and fluffier, more sugar will make it stiffer and heavier. (Do not melt the butter, it should be slightly cool, just out of the fridge for about 10-20 minutes -- room temperature is too soft.)
- 8. OPTIONAL: To keep the frosting from being too salty, use unsalted butter and then add 1/4 tsp of salt. FROST THE CAKE and garnish as you please (with chocolate coffee beans, or shaved chocolate, or whatever you wish)
- 9. I've tried to fill out the directions for you... if I've forgotten something please comment and let me know. Thanks!! You can do a search for "coffee essence" and "cocoa essence" to see what those ingredients are and where to find them. I discovered that they sell coffee essence at Amazon.com. Who knew?
Tips:
- Use high-quality ingredients for the best flavor. This includes using real butter, dark chocolate, and fresh cream.
- Make sure the chocolate is melted smoothly before adding it to the batter. This will help prevent lumps.
- Do not overmix the batter. Overmixing can make the cake tough.
- Bake the cake until a toothpick inserted into the center comes out clean. Do not overbake, as this will dry out the cake.
- Let the cake cool completely before frosting it. This will help prevent the frosting from melting.
- If you are using a store-bought frosting, be sure to let it come to room temperature before using it. This will make it easier to spread.
- Decorate the cake with your favorite toppings, such as chocolate shavings, whipped cream, or fresh berries.
Conclusion:
The mocha torte is a delicious and decadent dessert that is perfect for any occasion. It is a rich and chocolatey cake with a creamy mocha frosting. The cake is easy to make and can be decorated to your liking. With its rich flavor and elegant appearance, the mocha torte is sure to impress your friends and family.
