2 tablespoons baking cocoa
1 tablespoon instant coffee granules
1 large egg white
2 cups salted shelled pumpkin seeds (pepitas)

Steps:

  • Preheat oven to 325°. Place sugar, cocoa and coffee granules in a small food processor; cover and pulse until finely ground., In a bowl, whisk egg white until frothy. Stir in pumpkin seeds. Sprinkle with sugar mixture; toss to coat evenly. Spread in a single layer in a parchment-lined 15x10x1-in. baking pan., Bake 20-25 minutes or until dry and no longer sticky, stirring every 10 minutes. Cool completely in pan. 1 cup heavy cream
1 tablespoon confectioners' sugar
2/3 cup pumpkin puree
1/2 cup unsweetened cocoa powder
1/2 cup granulated sugar
2 teaspoons pumpkin pie spice, plus more for garnish
2 teaspoons vanilla extract
8 shots brewed espresso, hot
4 cups hot whole milk
Flaky sea salt, optional

Steps:

  • For the whipped cream: In a large bowl or in the bowl of a stand mixer fitted with the whisk attachment, add the cream and whip until it holds soft peaks. Add the sugar and continue to whip until it holds firm peaks.
  • For the pumpkin spice mocha: Into a small saucepan over medium-low heat, add the pumpkin puree, cocoa powder, granulated sugar, pumpkin pie spice, vanilla and 1 cup water. Stir until melted together to form a thick chocolate syrup, 1 to 2 minutes.
