MOCHA LOGS (FOR YULE)

Mocha logs (For Yule) image

I make these at Yule but these would be great as a Samhain / halloween cookies as well by placing a worm crawling across it or a spider sitting on top. Hershey's has always been top notch in Americans eyes. Here is another great recipe from The Hershey kitchens

ANOTHER HERSHEY'S RECIPE

Steps:

  • 1. 2/3 cup butter or margarine, softened 1 cup sugar 2 eggs 2 teaspoons vanilla extract 2-1/2 cups all-purpose flour 1/2 cup HERSHEY'S Cocoa 1/2 teaspoon baking soda 1/4 teaspoon salt MOCHA FROSTING (recipe follows) Powdered sugar (optional) Beat butter and sugar in large bowl until well blended. Add eggs and vanilla; beat until fluffy. Stir together flour, cocoa, baking soda and salt; gradually add to butter mixture, beating until well blended. Cover; refrigerate dough 1 to 2 hours. Heat oven to 350°F. Shape heaping teaspoons of dough into log shape, each about 2-1/2 inches long and 3/4 inches in diameter; place on ungreased cookie sheet. Bake 7 to 9 minutes or until set. Cool slightly; remove from cookie sheet to wire rack. Cool completely. Frost with MOCHA FROSTING. Using tines of fork, draw lines through frosting to represent tree bark. Lightly sift with powdered sugar, if desired. About 2-1/2 dozen cookies.
  • 2. MOCHA FROSTING 6 tablespoons butter or margarine, softened 2-2/3 cups powdered sugar 1/3 cup HERSHEY'S Cocoa 3 to 4 tablespoons milk 2 teaspoons powdered instant espresso dissolved in 1 teaspoon hot water 1 teaspoon vanilla extract Beat butter in medium bowl. Add powdered sugar and coca alternately with milk, dissolved espresso and vanilla, beating to spreading consistency. About 1-2/3 cups frosting.

Tips:

  • Use high-quality coffee for the best flavor. Freshly ground coffee beans will give you the best results. If you don't have a coffee grinder, you can purchase pre-ground coffee that is specifically labeled for espresso or mocha.
  • Don't over-extract the coffee. This will make the mocha bitter. The ideal brewing time for espresso is between 20 and 30 seconds.
  • Use a good quality chocolate. The type of chocolate you use will have a big impact on the flavor of the mocha. Look for a chocolate that is at least 70% cacao. If you use a chocolate that is too sweet, the mocha will be too sugary.
  • Don't boil the milk. This will make the milk curdle. Heat the milk until it is just below boiling, then remove it from the heat.
  • Froth the milk properly. This will give the mocha a light and airy texture. Use a milk frother or a whisk to froth the milk until it is doubled in volume and has a thick, creamy consistency.
  • Garnish the mocha with a sprinkle of chocolate powder or cocoa powder. This will add a bit of extra flavor and make the mocha look more appealing.

Conclusion:

Mocha is a delicious and versatile drink that can be enjoyed hot or cold. It is a perfect drink for any occasion, whether you are entertaining guests or just relaxing at home. With a few simple ingredients and a little bit of practice, you can make a delicious mocha that will rival anything you can find at a coffee shop.
