MOCHA GRANOLA

I can no longer find my favorite coffee and chocolate granola in stores anymore, so decided to try and replicate it by using the ingredient list and tweaking several different recipes. This is the end result that I enjoy having with milk or as a topping for chocolate pudding or coffee ice cream.

Categories     Nut

Number Of Ingredients 11

2/3 cup hazelnuts, coarsely chopped
2/3 cup sliced almonds
6 cups old fashioned rolled oats
6 tbsp. canola oil
1 cup honey
2-3 tbsp. espresso powder
¼ cup ground flaxseed (optional)
¼ tsp. ground cinnamon
Pinch of grated nutmeg
½ tsp. salt
8 oz. bittersweet chocolate, coarsely chopped

Steps:

  • Preheat the oven to 325˚ F. Line a baking sheet with parchment paper or a silicone baking mat. Place a large skillet over medium heat. Add the chopped hazelnuts and almonds. Cook, stirring occasionally, until lightly browned, 3-4 minutes. Stir in the oats and canola oil and continue to cook, stirring occasionally, until the oats are lightly toasted, about 3 minutes. Transfer the oat mixture to a large bowl and stir in the honey, espresso powder, ground flaxseed, cinnamon, nutmeg, and salt. Spread out onto the prepared baking sheet in an even layer. Bake, stirring every few minutes, until the granola is light golden brown, about 15 minutes. Move the granola to one side of the baking sheet and press gently into a thick slab. Let cool to room temperature. Break the dried and cooled granola into small clusters, mix in the chopped chocolate, and store in an airtight container.

Tips:

  • Choose the right oats. Rolled oats are the best type of oats to use for granola because they hold their shape well and have a chewy texture. Quick oats can also be used, but they will result in a softer granola.
  • Use a variety of nuts and seeds. This will add flavor, texture, and nutrition to your granola. Some popular nuts and seeds to use include almonds, walnuts, pecans, chia seeds, and flax seeds.
  • Don't overcook the granola. Granola should be baked until it is golden brown and crispy, but not too hard. Overcooked granola will be dry and crumbly.
  • Let the granola cool completely before storing it. This will help to prevent the granola from becoming too clumpy.
  • Store the granola in an airtight container in a cool, dry place. Granola will keep for up to 2 weeks at room temperature, or up to 6 months in the freezer.

Conclusion:

Mocha granola is a delicious and healthy breakfast or snack that is perfect for busy mornings. It is also a great way to use up leftover coffee grounds. With its chocolatey flavor and crunchy texture, mocha granola is sure to be a hit with everyone in your family.
