1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
2 large eggs
2 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups miniature pretzels, broken
1-1/2 cups sweetened shredded coconut
1-1/2 cups milk chocolate M&M's

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into creamed mixture. Stir in remaining ingredients., Shape 1/4 cupfuls of dough into balls; place 3 in. apart on ungreased baking sheets. Bake 12-14 minutes or until golden brown. Remove from pans to wire racks to cool.

1/2 cup softened butter, no substitutes
2/3 cup sugar
1 egg
2 squares (1 oz. each) unsweetened chocolate, melted and cooled
2 tsp. vanilla
1 3/4 cups flour
1/2 tsp. salt
MOCHA GLAZE:
1 cup (6 oz.) semi-sweet chocolate chips
1 tsp. light corn syrup
1 tsp. shortening
1 cup powdered sugar
4-5 Tbl. hot coffee
2 squares (1 oz. each) white baking chocolate, melted

Steps:

  • 1. In a large bowl, cream butter and sugar until light and fluffy. Add the egg, chocolate and vanilla; mix well. Combine flour and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for 1 hour or until firm. Divide dough into fourths form each portion into a 6-in. roll. Cut each roll into 1/2-in. slices; roll each into a 9-in. rope. Place ropes on greased baking sheets; form into pretzel shapes and space 2 in. apart. Bake at 400° for 5-7 minutes or until firm. Cool 1 minute before removing to wire racks to cool completely. For glaze, in a microwave-safe bowl, melt the chocolate chips, shortening and corn syrup; stir until smooth. Stir in confectioners' sugar and enough coffee to make a smooth glaze. Dip pretzels; allow excess to drip off. Place on waxed paper until set. Melt white chocolate; drizzle with white chocolate; allow excess to drip off. Let stand until chocolate is completely set. Store in an airtight container. Makes 3-4 dozen.

1 cup powdered sugar
1 teaspoon vanilla
1 3/4 cups Gold Medal™ all-purpose flour
1/3 cup unsweetened baking cocoa
1 teaspoon instant coffee granules or crystals
1 1/4 cups white vanilla baking chips (from 11-oz bag)
1/4 cup miniature candy-coated semisweet chocolate baking bits (40 bits)

Steps:

  • Heat oven to 350°F. In large bowl, beat butter, powdered sugar and vanilla with electric mixer on medium speed about 2 minutes or until creamy. On low speed, beat in flour, cocoa and coffee granules 1 to 2 minutes or until well mixed. Divide dough into 2 balls; press each to form disk. Wrap each disk in plastic wrap; freeze 10 minutes.
  • On lightly floured surface, roll 1 dough disk at a time until 1/8 inch thick. Cut with 5-inch gingerbread boy cutter. On ungreased cookie sheets, place cutouts 1 inch apart. Reroll and cut any remaining dough. Bake 9 to 10 minutes or until set. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely, 15 to 20 minutes.
  • Place white baking chips in small resealable freezer plastic bag; seal bag. Microwave on High 30 seconds. Turn bag over; microwave 15 seconds longer until chips are softened. Squeeze bag until mixture is smooth. (If necessary, microwave 10 seconds longer or until chips are completely melted and mixture is smooth.)
  • Cut very small tip from one corner of bag. Squeeze bag to drizzle melted chips over cookies for mummy wrapping. Add 2 baking bits to each cookie for eyes.

2 ounces unsweetened chocolate, melted
2 1/4 cups flour
1/4 teaspoon salt
1 cup butter, softened
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
2 teaspoons cocoa powder, heaped
1 teaspoon instant coffee granules, mixed in
1 teaspoon boiling water

Steps:

  • Preheat oven to 400F (200 degrees C).
  • Combine the flour and salt in a small bowl, stir to mix.
  • Beat the butter and sugar in a large bowl until light and fluffy, Beat in egg and vanilla.
  • Add the chocolate, beat again, add coffee and cocoa powder.
  • Gradually add the the flour mixture while making.
  • Fit a cookie press with desired plate and fill the press with dough, press the dough 1 inch apart onto a ungreased cookie sheet. If you don't have a press, I'm sure you could use a pasty bag and pipe shapes.
  • Bake batches for 7 mins or until set (you might want to play around with timings as most ovens are unique). Note these cookies harden whilst they cool, I would also recommend using a mixer unless your super strong as it's quite a lot of dough.

1/2 cup baking cocoa
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 3/4 cups powdered sugar
1/4 cup caramel topping
1/2 teaspoon vanilla
About 2 tablespoons milk

Steps:

  • In medium bowl, beat egg and coffee crystals with electric mixer on medium speed until crystals dissolve. Add granulated sugar, butter and 1 1/2 teaspoons vanilla. Beat on medium speed until light and fluffy. Stir in remaining cookie ingredients. Cover and refrigerate at least 1 hour until chilled.
  • Heat oven to 375°F. Roll dough 1/8 inch thick on lightly floured surface. Cut with 2 1/2-inch cookie cutters. On ungreased cookie sheet, place dough about 1 inch apart. Bake about 7 minutes or until set. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
  • In small bowl, mix powdered sugar, caramel topping and vanilla until crumbly. Stir in just enough milk until smooth and thin enough to drizzle. Drizzle over cookies.
