Yield Serves 6

Number Of Ingredients 10

1 large ripe mango, peeled, pitted, cut into ¤-inch pieces (about 1 1/2 cups)
1/4 cup olive oil
3 tablespoons fresh lime juice
3 tablespoons rice vinegar or 1 tablespoon white wine vinegar
1 teaspoon paprika
1 teaspoon sugar
1/4 teaspoon cayenne pepper
1 10-ounce bag mixed baby lettuces
1 cup diced peeled jicama
1/2 cup salted roasted cashews

Steps:

  • Combine 1/2 cup mango with next 6 ingredients in blender. Puree until smooth. Season dressing with salt and pepper. Transfer to small bowl. (Can be made 3 hours ahead. Cover; let stand at room temperature.)
  • Combine lettuces, jicama and remaining 1 cup mango in large bowl. Toss with enough dressing to coat. Sprinkle with cashews. Serve, passing any remaining dressing separately.

Tips:

  • Use ripe, firm mangoes to make a flavorful dressing. If the mangoes are too soft, the dressing will be too thin.
  • If you don't have a blender, you can mash the mangoes with a fork or potato masher.
  • Add a squeeze of lime juice to the dressing for a tangy flavor.
  • For a spicier dressing, add a pinch of chili powder or cayenne pepper.
  • If you don't have Chinese cabbage, you can use another type of cabbage or lettuce.
  • Add other vegetables to the salad, such as shredded carrots, cucumber, or red bell pepper.
  • Top the salad with nuts, seeds, or crumbled cheese for extra flavor and texture.
  • Serve the salad immediately, or chill it for later.

Conclusion:

This mixed salad with mango dressing is a refreshing and flavorful dish that is perfect for a summer meal. It's easy to make and can be tailored to your liking. With its vibrant colors and delicious flavors, this salad is sure to be a hit at your next gathering.
