Time 45m

Yield 4 servings

Number Of Ingredients 6

1 pound new potatoes, assorted varieties and colors are great
6 cloves garlic, smashed
2 tablespoons finely chopped sage
Pinch crushed red pepper flakes
Kosher salt
Extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • Cut the potatoes into halves or quarters, as long as they are all about the same size.
  • Place the potatoes in a large bowl and add the garlic, sage, and crushed red pepper. Generously sprinkle with kosher salt and olive oil. (The potatoes will absorb a lot of oil and salt; they will taste bland if we don't go big here.)
  • Lay the potatoes in a single layer on a sheet tray and roast in the preheated oven for 20 to 30 minutes. Check the potatoes halfway through the cooking process to rearrange so the potatoes will have even cooking time and get evenly browned. The potatoes should be nice and brown and really well flavored. Transfer to a serving bowl and serve.
  • Hot potato!

Provided by Food Network Kitchen

Categories     side-dish

Time 1h10m

Number Of Ingredients 5

6 medium Yukon gold potatoes (about 6 ounces each)
4 tablespoons unsalted butter, melted
Kosher salt and freshly ground pepper
1/4 cup mixed fresh herbs, such as parsley, tarragon, thyme, dill, or chives
1/4 cup grated Parmesan

Steps:

  • 1. Preheat the oven to 400 degrees F (use a convection oven if you have it). Peel the potatoes. Make 1/8-inch repeated crosswise cuts that go almost all the way through each potato. (Set a chopstick or thin wooden spoon crosswise to your knife next to the potato to keep from cutting through the potato.)
  • 2. Heat 2 tablespoons butter in an ovenproof skillet over medium-high heat. Turn the potatoes to coat with butter and sprinkle with 1 teaspoon each salt and pepper. Cook the potatoes until they are golden on the bottom, about 3 minutes. Add 1/3 cup water, bring to a low boil, reduce the heat, cover, and transfer to the oven. Bake the potatoes for 45 minutes.
  • 3. Meanwhile, mix the herbs with the remaining 2 tablespoons butter. Uncover the potatoes, fan the potatoes slightly to separate the slices, and brush evenly with the herb butter. Sprinkle with the Parmesan. Increase the temperature to 450 degrees F and cook uncovered until golden brown, about 15 minutes.

Here's what you need: russet potatoes, baking soda, salt, olive oil, garlic, fresh rosemary, black pepper, salt, pepper, fresh parsley leaf

Provided by Merle O'Neal

Categories     Breakfast

Yield 5 servings

Number Of Ingredients 10

13 russet potatoes, cut into 1-inch (2 1/2 cm) pieces
1 teaspoon baking soda
1 teaspoon salt
¼ cup olive oil
2 tablespoons garlic, minced
2 tablespoons fresh rosemary, or fresh thyme, finely chopped
1 teaspoon black pepper
salt, to taste
pepper, to taste
1 small handful fresh parsley leaf, minced to garnish

Steps:

  • Fill a large pot with water and boil. Add salt, baking soda, and potatoes, and stir.
  • Return to a boil, reduce to a simmer, and cook for 10 minutes after returning to a boil. A fork should easily pierce the potato pieces by the end. Drain and let sit one minute while moisture evaporates.
  • Combine olive oil, rosemary (or thyme), garlic, and a few grinds of black pepper in a small saucepan and heat over medium heat. Stir constantly until garlic just begins to turn golden, about 2-3 minutes.
  • Immediately strain oil through a fine-mesh strainer over the potatoes. Add salt and pepper to taste, and mix.
  • Shake the pot that the potatoes are in so that they slam against all sides of the pot, this will loosen the outer layer of the potatoes to form a mashed layer around each potato piece.
  • Preheat oven to 425°F (220°C).
  • Transfer potatoes to a large rimmed baking sheet and separate them, spreading them out evenly.
  • Transfer to oven and roast, without moving, for 30-35 minutes.
  • Using a thin, flexible metal spatula flip potatoes. Continue roasting until potatoes are deep brown and crisp all over, turning and shaking them a few times during cooking, 30 to 40 minutes longer.
  • Transfer potatoes to a large bowl and add the garlic-rosemary mixture (optional) and minced parsley. Toss to coat and season with more salt and pepper to taste. Serve immediately.
  • Enjoy!

Tips:

  • Choose the right potatoes: For this recipe, it's best to use a combination of waxy and starchy potatoes. Waxy potatoes, like Red Potatoes or New Potatoes, will hold their shape well during roasting, while starchy potatoes, like Russet Potatoes or Yukon Gold Potatoes, will become fluffy and tender.
  • Cut the potatoes evenly: Cutting the potatoes into uniform pieces will help them cook evenly. Aim for 1-inch cubes or wedges.
  • Toss the potatoes with oil and seasonings: Be generous with the oil and seasonings to ensure that the potatoes are well-coated and flavorful. You can use olive oil, avocado oil, or melted butter.
  • Roast the potatoes at a high temperature: Roasting the potatoes at a high temperature will help them get crispy on the outside and tender on the inside. Aim for a temperature of 425°F (220°C).
  • Don't overcrowd the pan: Overcrowding the pan will prevent the potatoes from roasting evenly. Make sure there is enough space between the potatoes so that they can get crispy all over.
  • Roast the potatoes until tender: The potatoes are done roasting when they are tender on the inside and crispy on the outside. This usually takes about 20-30 minutes, depending on the size of the potatoes.
  • Make the herb butter while the potatoes are roasting: This will allow the flavors in the herb butter to meld together.
  • Serve the potatoes hot: Roasted potatoes are best served hot out of the oven. You can garnish them with fresh herbs, such as parsley, cilantro, or chives.

Conclusion:

Mixed Roasted Potatoes with Herb Butter is a versatile and delicious side dish that can be enjoyed with a variety of meals. The combination of waxy and starchy potatoes gives the dish a nice balance of textures, while the herb butter adds a burst of flavor. This recipe is easy to make and can be tailored to your own taste preferences. So next time you're looking for a side dish to impress your guests, give this recipe a try!
