Time 5m

Yield 1 cup

Number Of Ingredients 4

1/4 cup cider vinegar
Kosher salt and freshly ground black pepper
1/3 cup extra-virgin olive oil
2 tablespoons fresh goat cheese, at room temperature

Steps:

  • Whisk the vinegar and a generous pinch of salt in a small bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Whisk in a couple of turns of freshly ground black pepper. Stir in the goat cheese.

Tips:

  • For a sweeter salad, use ripe pears. If your pears are not ripe, you can roast them in the oven for 10-15 minutes at 400 degrees Fahrenheit.
  • To make the goat cheese more creamy, let it come to room temperature before crumbling it.
  • If you don't have fig vinegar, you can substitute balsamic vinegar or white wine vinegar.
  • To make the salad more substantial, add some cooked chicken, bacon, or shrimp.
  • For a vegan version of the salad, omit the goat cheese and use a plant-based dressing.

Conclusion:

This mixed greens salad with pears, goat cheese, and fig vinaigrette is a delicious and refreshing salad that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. The combination of sweet pears, creamy goat cheese, and tangy fig vinaigrette creates a flavor profile that is sure to please everyone at your table.
