2 teaspoons five-spice powder, available on spice aisle

5 ounces, half a sack, mixed prewashed baby salad greens
2 radishes, sliced
1/4 European cucumber, thinly sliced
1/2 teaspoon wasabi paste
1 tablespoon rice vinegar or rice vinegar
1 tablespoon soy sauce
3 tablespoons -virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Coat your steak with a combination of five-spice powder and grill seasoning or salt and pepper. Heat a grill pan or griddle over high heat. Spray grill surface or wipe with a thin layer of oil. Add tuna steak to the hot cooking surface and sear tuna 2 minutes on each side. Remove tuna from heat.

1 cup braeburn apple, julienned, cut 2-inches long (can substitute similar apple such as Honey Crisp, etc.)
2 tablespoons apple cider vinegar
2 tablespoons maple syrup (NOT imitation)
2 teaspoons brown mustard (or Dijon)
2 1/2 teaspoons walnut oil
1/8 teaspoon salt
1/8 teaspoon cayenne
1/2 cup walnuts, toasted and chopped

  • In small glass bowl, prepare salad dressing first and set aside.
  • Use salad spinner to remove excess moisture from the greens.
  • *In large non-reactive serving bowl place the sliced apples and toss them with a little bit of apple cider to halt oxidizing.
  • Next, add the salad greens, a few tablespoons of the salad dressing and toss gently again with tongs to mix.
  • Serve remaining salad dressing on side along with the toasted walnuts if using.
  • *For best results, cut up apples and toss with the vinegar right before serving.

1 garlic clove, minced
1/4 cup olive oil
1/4 teaspoon salt

Steps:

  • Combine balsamic vinegar and figs in a small saucepan over high heat, and bring to a boil. Reduce heat, and simmer until reduced to 1/3 cup: about 5 minutes.
  • Combine the fig mixture, water, and lemon juice in a blender, and process until smooth.
  • Place the fig mixture in a small bowl. Stir in shallots, thyme, and garlic. Add olive oil and salt; stir well with a whisk.
  • To serve: Drizzle enough dressing on the greens to coat. Place the greens on 6 salad plates and top with pear and goat cheese.

For the salad:
2 cups mixed tender greens
2 medium, sweet Cara Cara oranges
1 small avocado, sliced thinly
¼ cup toasted hazelnuts, chopped (or almonds)
¼ cup pomegranate arils
--- black & white sesame seeds (optional)
For the vinaigrette:
5 TBSP. extra virgin olive oil
1 TBSP. white balsamic vinegar
2 TBSPS. fresh orange juice
1 TBSP. shallot, minced
½ tsp. honey
--- sea salt
--- freshly ground pepper
¼ tsp. finely grated lemon zest

Steps:

  • Peel the oranges with a sharp knife, removing as much of the pith as possible. Remove any seeds and slice the oranges very thinly. Peel and slice the avocado.
  • To make the vinaigrette, combine all the ingredients in a mason jar and shake well. Dip a piece of the greens into the mixture to taste and adjust the seasoning, if necessary.
  • Divide the salad greens among four plates (or use a large shallow bowl for group service). Place the sliced oranges and the avocado slices on top of the greens. Add the pomegranate arils and the toasted nuts. Sprinkle some sesame seeds on the avocado slices (if using).
  • Drizzle some of the vinaigrette over the salad or serve.

  • Combine first 3 ingredients in small saucepan. Bring to boil. Reduce heat; cover and simmer until prunes are soft and juice is reduced to 2 tablespoons, about 6 minutes. Transfer prunes to bowl; reserve juice. Chill prunes until cold, about 2 hours. Cut into quarters.
  • Cut peel and white pith from oranges. Working over bowl to catch juice and using small sharp knife, cut between membranes to release segments. Combine 2 tablespoons orange juice from bowl, oil, vinegar, grated orange peel, and reserved prune juice; whisk to blend. Season dressing with salt and pepper.
  • Gently toss orange segments, minced red onion, 1 tablespoon fennel fronds, and 1 tablespoon dressing in medium bowl. Combine mixed greens, onion rings, and fennel bulbs in large bowl. Toss with remaining dressing. Divide salad among 4 plates. Top with prunes and orange mixture.

Steps:

  • Mix 2/3 cup orange juice, honey, 3 garlic cloves, minced thyme and orange peel in 13x9x2-inch glass baking dish. Add chicken breasts and turn to coat. Cover and chill overnight, turning occasionally.

  • 1. Preheat the grill on low heat. Wash the greens and drain. This recipe serves two. Mix the dressing by whisking together the vinegar and honey. Vinaigrette:
1 small garlic clove, peeled
7 anchovy fillets
2 tablespoons fresh lemon juice
2 tablespoons freshly grated Parmesan cheese
2 teaspoons Dijon mustard
1/2 cup extra-virgin olive oil
Salad:
10 cups bite-size pieces hearts of romaine (2 to 3 hearts)
3 heads of Belgian endive, cut crosswise into 1/2-inch-wide strips
3 cups (lightly packed) baby arugula
14 kumquats, thinly sliced into rounds, seeded

Steps:

  • For vinaigrette:
  • With machine running, drop garlic through feed tube of processor and chop finely. Add anchovies, fresh lemon juice, Parmesan cheese, and Dijon mustard; blend well. Gradually add extravirgin olive oil, blending until vinaigrette is smooth. Season vinaigrette to taste with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover and chill. Bring to room temperature and rewhisk before using.
  • For salad:
  • Combine romaine pieces, Belgian endive strips, baby arugula, and kumquats in large bowl. Toss salad with enough vinaigrette to coat and serve.

2 fresh whole anaheim chilies, sliced into strips
1/8 cup extra virgin olive oil
salt and pepper
1 cup halloumi cheese, cut into 1-by-2-inch pieces
1 cup firm cherry tomatoes, left whole
1 lb mixed greens
1/2 cup olive oil
1/4 cup champagne vinaigrette or 1/4 cup lemon juice
2 teaspoons white pepper
2 teaspoons salt
1 teaspoon garlic, finely minced

Steps:

  • Whisk dressing ingredients together in a small non-reactive bowl.
  • Seed and stem the anaheim chilies.
  • Toss chilies in olive oil with salt and pepper and set aside.
  • Cover a small plate with a thin layer of olive oil and dip the slices of the halloumi cheese.
