White Chocolate and Mixed Berry Muffins image

I got the original recipe from www.taste.com.au, but it uses buttermilk. What a fatty! As I don't want to eat my muffins in guilt, I made them using skim milk - and they turn out just nice.

Tips for Making the Best Mixed Berry Muffins:

  • Use Fresh or Frozen Berries: Fresh berries are ideal, but frozen berries work well too. If using frozen berries, thaw them before adding them to the batter.
  • Don't Overmix the Batter: Overmixing the batter can result in tough muffins. Mix just until the ingredients are combined.
  • Fill the Muffin Tins Properly: Fill the muffin tins about ⅔ full. This will help the muffins rise evenly.
  • Bake the Muffins at the Right Temperature: The ideal oven temperature for baking muffins is 400°F (200°C). This will help the muffins rise quickly and evenly.
  • Don't Overbake the Muffins: Overbaking can make the muffins dry and crumbly. Bake the muffins for the amount of time specified in the recipe.

Conclusion:

Mixed berry muffins are a delicious and easy-to-make treat that can be enjoyed for breakfast, lunch, or a snack. With the right ingredients and a little bit of care, you can make perfect mixed berry muffins every time. Be sure to experiment with different berries and flavorings to create your own unique muffin recipes.
