Time 16m

Yield 4 servings

Number Of Ingredients 15

1 cup blueberries
1 cup blackberries
1 cup raspberries
1/2 cup granulated sugar
1 lemon, zested and juiced
2 cups rolled oats
1/2 cup sliced almonds
3 tablespoons salted butter
4 tablespoons maple syrup
1 tablespoon brown sugar
1 teaspoon ground cinnamon
Pinch of kosher salt
1 tablespoon cornstarch
1 pint vanilla ice cream, for serving
Fresh mint leaves, to garnish

Steps:

  • Place a small pot over medium heat and add the blueberries, blackberries, raspberries, granulated sugar and lemon zest and juice. Cook until the sugar is dissolved and the berries have released their juices, about 6 minutes.
  • Meanwhile make the granola. Place a large nonstick skillet over medium-high heat. Add the oats and almonds and toast until light golden, 2 to 3 minutes. Remove from the skillet and reserve. Reduce the heat to medium, then add the butter to the skillet. Once the butter is melted, add the maple syrup, brown sugar, cinnamon and salt. Bring to a boil and cook for 1 minute, until you have a thin syrup. Add the toasted ingredients back to the skillet. Cook, stirring and tossing the ingredients, for 1 minute. Transfer to a plate and set aside.
  • Make a slurry by stirring the cornstarch into 2 tablespoons of water. Stir into the berry mixture and allow to thicken, about 1 minute.
  • Portion the berry mixture into 4 serving bowls. Top liberally with the oat and almond mix. Add 1 scoop of ice cream to each and garnish with a little more of the berry mix, a little more granola and some mint, then serve warm.

Yield Makes 6 servings

Number Of Ingredients 11

2 12-ounce packages frozen mixed berries (such as blueberries, blackberries, strawberries and raspberries; about 6 cups), unthawed
1/4 cup sugar
1 cup all purpose flour
1 tablespoon fresh lemon juice
3/4 cup old-fashioned oats
2/3 cup (packed) golden brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
7 tablespoons chilled unsalted butter, diced

Steps:

  • Preheat oven to 375°F. Combine berries, 1/4 cup sugar, 1/4 cup flour and lemon juice in large bowl; toss to blend well. Transfer berry mixture to 9-inch-diameter glass pie dish. Combine remaining 3/4 cup flour, oats, brown sugar, spices and salt in medium bowl. Add butter; rub in with fingertips until topping holds together in small moist clumps. Sprinkle over berry mixture.
  • Bake crisp until berry mixture bubbles thickly and topping is golden brown, about 1 hour. Let stand 15 minutes. Serve warm or at room temperature.

Tips:

  • Use fresh or frozen berries. Fresh berries will give you the best flavor, but frozen berries are a great option if you don't have any fresh ones on hand. Just be sure to thaw them before using.
  • Don't overmix the batter. Overmixing will make the crisp tough. Just mix until the ingredients are combined.
  • Use a microwave-safe mug. This is essential for cooking the crisp in the microwave.
  • Cook the crisp for 1-2 minutes, or until the berries are bubbling and the topping is golden brown. Keep an eye on the crisp so that it doesn't overcook.
  • Let the crisp cool for a few minutes before eating. This will help the topping to set.

Conclusion:

Mixed berry crisp in a mug is a quick and easy dessert that is perfect for a weeknight treat or a special occasion. It's also a great way to use up any leftover berries you have on hand. With its simple ingredients and delicious flavor, this crisp is sure to become a favorite.
